7. Defect diagnosis
Audit ingredient condition, measure, method, equipment recovery, sequence, holding and handoff. Correct the process that created the defect instead of covering it.
8. Yield and economics
Weigh ingredients, record finished yield, define viscosity and tasting targets, and evaluate after realistic hot holding—not only fresh from the pot. Calculate actual usable yield, portion cost, contribution, labor burden, waste and sales mix. Confirm that the item remains worth making at real volume.
9. Mastery test
Produce three consecutive dishs to standard, one during a mixed order and one after an intentional variable change. The learner must diagnose, recover, document and teach the method back.

Rush plan
- Set a maximum active batch based on equipment recovery and quality life.
- Identify what can be safely par-cooked or held and what must be cooked to order.
- Use short refill intervals rather than one oversized batch before a band break.
- Define the call between order taker, station, expo and runner.
- Create an 86 trigger before ingredients or quality actually run out.
Failure laboratory
Test the dish at fresh pickup, five minutes and ten minutes. Intentionally vary one factor—batch load, sauce amount, hold, cut size or assembly order—and document where quality breaks. Redesign the standard around the real service window.
Mastery assessment
Produce three matching orders, then a five-ticket simulated rush. The trainer should evaluate setup, ticket sequencing, food safety, final quality, portion, waste and communication.
