Food Safety Control
Control the hazards that can injure guests and close a kitchen.
Recognize reportable symptoms and escalate illness instead of working through it.
Identify TCS food and protect it through every stage of the flow of food.
Select, calibrate, sanitize and place thermometers correctly.
Verify internal temperature in the coldest or thickest part of the food.
Move hot food through approved cooling stages using shallow pans and active methods.
Keep food within approved holding limits and document corrective action.
Separate raw and ready-to-eat food, tools, hands and work zones.
Treat allergen requests as a controlled kitchen process, never a casual promise.
Use labels, FIFO and discard rules without guessing.
Stop or modify operations when utilities or critical equipment fail.
