Supervised capstone
Fryer, Griddle, Oven and Baking Methods assessment
Direct observation of understanding, execution, sensory judgment and service readiness.
Complete supervised assessment
Fryer, Griddle, Oven and Baking Methods assessment: evidence standard
This capstone is not passed by reading or checking boxes. The learner must demonstrate the complete work under direct observation, explain the reasons behind each control and repeat any critical step until performance is stable.
Assessment stations
- Explain. Brief the trainer on purpose, hazards, tools and control points before beginning.
- Set up. Inspect, prepare and arrange the station without prompts that conceal missing knowledge.
- Execute. Complete the task at realistic service pace while preserving every critical control.
- Diagnose. Respond to one planted defect, shortage or guest/ticket complication.
- Close the loop. Measure the result, clean and reset, document evidence and explain the next improvement.
Required control points
- Read whole ticket. The learner must identify the control, use it without prompting and explain the consequence of skipping it.
- Call and acknowledge. The learner must identify the control, use it without prompting and explain the consequence of skipping it.
- Start by longest lead time. The learner must identify the control, use it without prompting and explain the consequence of skipping it.
- Control equipment load. The learner must identify the control, use it without prompting and explain the consequence of skipping it.
- Finish the plate together and reset. The learner must identify the control, use it without prompting and explain the consequence of skipping it.
Scoring rubric
Accurate, safe, efficient and able to diagnose variation while teaching the reason.
Meets the standard without prompting; minor inefficiency does not affect safety or guest quality.
Needs prompts, loses sequence or cannot consistently recover a defect.
Misses a critical control, creates risk or cannot produce the approved result.
Critical-fail conditions
- Unsafe act or contamination is not corrected.
- The learner cannot explain when to stop and escalate.
- Required measurement or documentation is fabricated or omitted.
- The final product or service repeatedly misses the approved standard.
A critical fail ends that attempt. The trainer isolates the risk, reteaches the specific control and schedules a new observed attempt. It is not averaged away by strengths elsewhere.
Pressure scenario
A set break sends simultaneous burger, tender, catfish and loaded-fry tickets to a two-person line.
The trainer introduces one realistic complication: a missing item, equipment delay, guest concern, late ticket, staff handoff or quality defect. The cook must communicate, protect the standard and choose the correct recovery instead of hiding the problem.
Required assessment record
| Evidence | Record |
|---|---|
| Setup | Tools inspected, station ready, hazards named |
| Execution | Sequence, measurements, timing and quality observations |
| Recovery | Defect identified, cause considered, correction tested |
| Close | Cleaning, reset, waste, handoff and records completed |
| Trainer decision | Rating, evidence, restrictions and next practice date |
Connected study before reassessment
Assessment stations
- Deep-frying science and oil stewardship: Control oil condition, load, recovery, breading, doneness and immediate service.
- Flour, batter and breading systems: Engineer adhesion, texture, seasoning and pickup for chicken, catfish and vegetables.
- Griddle and plancha control: Manage zones, recovery, crust, steaming, cross-contact and ticket sequencing.
- Oven, convection and broiler control: Use loading, airflow, rack position and carryover to produce consistent batches.
- Braising, roasting and slow-cook methods: Build tenderness while controlling evaporation, collagen conversion and yield.
- Biscuits, cornbread, cobblers and simple baking: Control mixing, leavening, hydration, pan choice and service timing.
Evidence standard
The trainer should assign representative products and conditions from the venue’s real menu. The learner must work without unsafe shortcuts, explain decisions, meet the written quality standard and repeat critical skills more than once.
