3. Complete operating method

Do not call a correction successful until the next measured result meets the original standard. When the cause is uncertain, reduce variables and compare a fresh control.

Frying is controlled dehydration. Oil temperature, product moisture, load size, coating structure and immediate service determine crispness and grease absorption.

Tools and station setup

Use a calibrated fryer thermometer, baskets or spider, sheet pans with racks, breading pans, timers, PPE and an oil-filtration plan.

Professional rule: Read the manufacturer’s instructions and venue procedures before using unfamiliar equipment. Lock out and disconnect powered equipment before cleaning or clearing a jam.
