1. Mechanism
A cooking method is a heat-transfer strategy chosen for the ingredient, desired surface, desired interior and service window. The method is complete only when the food survives holding and travel to the guest. The learner must explain what the technique changes and why it is preferable to another method for this product and service window.
2. Preparation
Standardize product size, starting condition, tools, equipment setting, batch size, station arrangement and the endpoint before beginning.
3. Control variables
Control piece size, surface moisture, load, heat recovery, turning, endpoint, rest and holding. Compare the first, middle and last batch. Change one major variable at a time and record the effect on output, time, yield and sensory or operating quality.
4. Execution
Set the station, apply the method within designed capacity, watch the food or beverage rather than only the clock, judge endpoint with multiple cues, finish and hand off without unnecessary delay.
5. Sensory and operating endpoints
Define what correct looks, smells, sounds, feels and tastes like where tasting is appropriate. Add measurable limits such as finished mass, temperature, time, clarity, foam, yield or ticket performance.
6. Volume adaptation
Concert surges punish methods with slow recovery or fragile crust. Build batches and pickup timing around the actual ticket wave, not maximum equipment capacity. Determine batch size, recovery time, replenishment point and which steps may be staged without damaging quality or safety.
7. Failure recovery
Use a fresh control, identify the earliest point where the result departed from standard, correct one variable, repeat and document. Do not disguise defects with garnish, sauce, extra ice or unapproved seasoning.

Frying is controlled dehydration. Oil temperature, product moisture, load size, coating structure and immediate service determine crispness and grease absorption.
Required setup
Use a calibrated fryer thermometer, baskets or spider, sheet pans with racks, breading pans, timers, PPE and an oil-filtration plan.
Execution sequence
- Dry or drain product before coating.
- Build an even coating and allow flour systems to hydrate briefly when the formula calls for it.
- Load below the fryer’s recovery limit and separate allergen workflows.
- Judge doneness with time, color, sound and internal temperature where applicable.
- Drain on a rack, season immediately and move to the guest without trapping steam.
How to know it is right
- Coating is crisp, dry and evenly colored.
- Interior is moist and fully cooked.
- Oil smells clean rather than acrid, fishy or burnt.
- Finished food does not leave a heavy oil film.
