Chapter 5 of 10

The Set Break, From the Pass

Where in the shift: twice.

Prerequisites: Modules 42, 50.

The sequence

Stage in the last ten minutes.

Work it.

Assign the reset.

And protect the second break.

The decisions

What to stage and when. The last ten minutes of a set are the most valuable ten minutes of the night. A kitchen that begins staging when the applause starts is already behind.

Whether to simplify. Pre-authorized at pre-shift, executed here.

And who owns the reset. This is the lesson.

A kitchen that handles the first break and collapses at the second does not have a capacity problem. It has a recovery problem, per Module 50 — and the set between is the only recovery window the night provides.

It gets spent on backlog — running the tickets that stacked up, catching up on cleaning — because that is the visible work and nobody assigned the invisible preparation.

Which makes the fix a written list with a named owner and a deadline inside the set, and it costs no labor.

What you are reading

The staging state before the break, not during it.

And the second break's starting condition. Wells, product, and clean pans are visible from across the kitchen.

What goes wrong here

Staged late.

Reset unassigned. A second break materially worse than the first with everything else identical.

And the simplification not taken — a full menu executed badly.

Verification

Stand still for one set and watch what the kitchen does with the time. Uncomfortable, and it is the exercise that reveals the reset problem.

The boundary

None specific.
