Scaling table

Scaling is arithmetic, not permission to ignore service behavior. Verify the 1× formula first, then make a controlled intermediate batch before a 50× event batch.

ScaleCalculated ingredients
70 g Kosher or fine flaky salt, house-selected · 25 g Mild ground chile · 5 g Dried citrus powder or venue-approved acid seasoning
10×700 g Kosher or fine flaky salt, house-selected · 250 g Mild ground chile · 50 g Dried citrus powder or venue-approved acid seasoning
50×3500 g Kosher or fine flaky salt, house-selected · 1250 g Mild ground chile · 250 g Dried citrus powder or venue-approved acid seasoning

Method

  1. Weigh all dry ingredients.
  2. Mix until visually homogeneous.
  3. Store dry in a labeled service container; use a separate clean rimming tray and discard contaminated wet material after service.

Working numbers

Measured pre-dilution liquid represented in ounce-based ingredients: 0 oz where applicable. Dilution control: Not applicable as a finished cocktail; control the stated concentration and the measured dose in the final beverage.

Storage: Dry, closed and protected from moisture/contamination. Shelf-life rule: House dry-goods policy; discard if wet, contaminated, caked with foreign material or out of aroma standard.

Labeling: Chili-Salt Rim · batch/version · production date.

Critical controls

  • Weigh the blend.
  • Keep bulk seasoning separate from used rimming trays.
  • Do not return wet/used rim mix to bulk storage.
  • Control the amount on the glass; an excessive rim changes every sip.

Production verification

Make the formula exactly as written before adjusting it. Record actual packaged or finished yield, starting ingredient temperature where it materially affects the result, and the service portion. Compare the finished sample against the sensory target: Salty, gently chile-forward and bright without overwhelming the drink.. If the formula includes Kosher or fine flaky salt, house-selected, Mild ground chile, Dried citrus powder or venue-approved acid seasoning, verify that each product is the intended house specification; a substitution can change sugar, acidity, bitterness, aroma, alcohol strength or texture.

Sensory standard

The target is Salty, gently chile-forward and bright without overwhelming the drink.. Evaluate the beverage at its intended serving temperature and dilution. The standard should be descriptive enough that two trained bartenders can compare results and identify which axis—sweetness, acidity, bitterness, alcohol, aroma, body, carbonation, temperature or dilution—is outside the house target.

Salts and rims: working standard

A usable Salts and rims standard joins flavor function to receiving, preparation, holding, yield and a clear stop point when quality or safety leaves tolerance.

Rim blends absorb moisture and aroma from the station. Keep bulk seasoning separate from the working tray, prepare only the service quantity, and document the exact weight formula so a replacement salt or chile blend cannot silently change intensity.

Flavor, purchasing and prep decisions

• Choose crystal size for the job: fine salt adheres densely, kosher gives moderate texture, and flaky salt creates large irregular bursts.

• Write rim blends by weight, including chile, sugar or citrus powder, and label allergens in commercial blends.

• Use a partial rim when guest preference or drink balance benefits from an unseasoned side.

• Set a consistent wetting agent and rim depth; random citrus rubbing creates uneven adhesion.

• Keep seasoning trays shallow, covered between service periods and replaced when wet or contaminated.

Ingredient function and control map

Receiving, preparation and holding standard

• Prepare a clean, dry tray with a measured amount of fresh blend.

• Moisten only the outside edge of the glass unless the spec calls for interior seasoning.

• Roll or press to the defined depth without burying the rim.

• Tap off loose excess before adding ice and liquid.

• Discard used seasoning at the end of the service window; do not return it to bulk storage.

Quality and yield controls

The rim is even and limited to the intended portion.

Crystals stay on the glass rather than falling into the drink.

Salt or chile supports flavor without exhausting the palate.

The tray remains dry, clean and free of glass chips or liquid contamination.

Ingredient failure diagnosis

Juice and salt run inside the glass and change the whole drink.

Every sip is forced through excessive seasoning.

Contaminated blend clumps and is held across shifts.

Large flakes are used where even fine coverage is required.

Records that make the standard enforceable

• Supplier, lot or source

• Prep method and usable yield

• Storage temperature and discard point

• Allergen and substitution notes

Training and sign-off

Prepare identical half-rims with fine, kosher and flaky salt plus one chile blend. The trainee must compare adhesion and intensity, choose the correct texture for two drinks and execute ten consistent rims without contaminating the tray.

Version control

Do not silently change the working formula. Record the recipe version, date, reason for change, test result and person approving the update. If a brand or product specification changes, rerun the sensory and cost check before treating the substitution as equivalent. A formula is professional only when the team can reproduce the same intended result and explain why a revision was made.
