Assessment stations
  1. Explain. Brief the trainer on purpose, hazards, tools and control points before beginning.

  3. Execute. Complete the task at realistic service pace while preserving every critical control.
  4. Diagnose. Respond to one planted defect, shortage or guest/ticket complication.
  5. Close the loop. Measure the result, clean and reset, document evidence and explain the next improvement.

Critical-fail conditions
  • Unsafe act or contamination is not corrected.
  • The learner cannot explain when to stop and escalate.
  • Required measurement or documentation is fabricated or omitted.
  • The final product or service repeatedly misses the approved standard.

A critical fail ends that attempt. The trainer isolates the risk, reteaches the specific control and schedules a new observed attempt. It is not averaged away by strengths elsewhere.

Pressure scenario

Dance lessons end at 8:55, the opener starts at 9:00 and 150 guests order within fifteen minutes.

The trainer introduces one realistic complication: a missing item, equipment delay, guest concern, late ticket, staff handoff or quality defect. The bartender must communicate, protect the standard and choose the correct recovery instead of hiding the problem.

Assessment stations

  1. High-volume station architecture: Arrange reach zones, backups, trash, ice and handoffs around the actual sales mix.
  2. Two-hand work and motion economy: Reduce empty movement while keeping each action controlled and visible.
  3. Batching, pre-dilution and quality control: Use approved batch systems with accurate labels, yield, storage and final-service controls.
  4. Rounds, order clustering and completion: Organize multi-drink orders so cold, carbonated and frozen items finish correctly.
  5. Longnecks, shots and simple mixed drinks at speed: Deliver the core high-volume mix accurately without turning service into uncontrolled pouring.
  6. Concert arrival and set-break surge plans: Forecast demand, stage product and switch roles before the crowd reaches the bar.
  7. Dance lessons, band changes and floor rhythm: Use predictable room rhythms to prep, restock, clean and release breaks.
  8. Patio, satellite and temporary bars: Set minimum viable inventory, communication, cash and responsible-service controls.
  9. Frozen drinks and high-demand specialties: Manage machine recovery, batch quality, cup supply and responsible portioning.
  10. 86 decisions, equipment failure and surge recovery: Simplify intelligently, communicate changes and restore standards after disruption.

Required service conditions

  • A controlled opening or readiness check.
  • A mixed-order service simulation with noise and interruption.
  • At least one safety, quality or responsible-service decision.
  • A recovery scenario involving stock, equipment, guest or communication failure.
  • A complete close, count or handoff appropriate to the track.
