This capstone is not passed by reading or checking boxes. The learner must demonstrate the complete work under direct observation, explain the reasons behind each control and repeat any critical step until performance is stable.
Assessment stations
- Explain. Brief the trainer on purpose, hazards, tools and control points before beginning.
- Set up. Inspect, prepare and arrange the station without prompts that conceal missing knowledge.
- Execute. Complete the task at realistic service pace while preserving every critical control.
- Diagnose. Respond to one planted defect, shortage or guest/ticket complication.
- Close the loop. Measure the result, clean and reset, document evidence and explain the next improvement.

Scoring rubric
Accurate, safe, efficient and able to diagnose variation while teaching the reason.
Meets the standard without prompting; minor inefficiency does not affect safety or guest quality.
Needs prompts, loses sequence or cannot consistently recover a defect.
Misses a critical control, creates risk or cannot produce the approved result.
Critical-fail conditions
- Unsafe act or contamination is not corrected.
- The learner cannot explain when to stop and escalate.
- Required measurement or documentation is fabricated or omitted.
- The final product or service repeatedly misses the approved standard.
A critical fail ends that attempt. The trainer isolates the risk, reteaches the specific control and schedules a new observed attempt. It is not averaged away by strengths elsewhere.
Pressure scenario
A guest in boots asks for “something not sweet” while the bar is loud; the bartender must make a useful recommendation in one short conversation.
The trainer introduces one realistic complication: a missing item, equipment delay, guest concern, late ticket, staff handoff or quality defect. The bartender must communicate, protect the standard and choose the correct recovery instead of hiding the problem.

The learner must complete representative comparisons, explain the mechanism, meet the house standard more than once, diagnose a planted defect and transfer the skill into service pressure.
