Neither follows, and the honest answer is a mechanism.
3. The Mechanism
Three processes, running simultaneously
Maturation is not one thing. Three processes operate at once and they contribute differently.
Extraction. The spirit pulls compounds out of the wood — vanillin, lactones, tannins, and sugars from the toasted and charred layers. This is what produces vanilla, coconut, spice, and sweetness, and it is fastest early in a barrel's life.
Oxidation. Slow reaction with the small amount of air the barrel permits. This softens harshness, integrates the spirit, and develops complexity — and it is slow, which is why long maturation cannot be simulated by more wood contact.
Subtractive filtration. The char layer adsorbs sulfur compounds and other undesirables. The barrel removes as well as adds.
Those three are why "more oak" and "more mature" are different things, and it is the distinction the whole module rests on.
Thermal cycling is the engine
The spirit moves in and out of the wood as temperature changes.
Warming expands the liquid and drives it into the wood's pores. Cooling contracts it and draws it back out, carrying extracted compounds with it.
Each cycle is an extraction event.
Which means the number and amplitude of cycles determines extraction rate — not the calendar.
A warehouse with large daily swings and long hot seasons cycles hard and often. A cool, stable, thick-walled warehouse cycles gently.
So four years in one and four years in the other are not comparable amounts of wood interaction, and that is the mechanism behind the whole Texas question.
Wood variables
Species. American white oak is the standard for bourbon and it contributes vanillin and coconut lactones. European oak contributes more tannin and spice. Different species, different compounds.
Toast and char. Toasting develops compounds in the wood by heating it. Charring burns the surface — creating the char layer that filters and opening the wood beneath for extraction. Char level is a real variable and it changes both extraction and filtration.
New versus refill. A new barrel gives up a great deal, fast. A refill barrel has already surrendered much of its extractable material, so it contributes more slowly and more subtly — and it permits longer maturation without over-oaking.
Bourbon's new-charred-oak requirement is why bourbon is oak-driven and why long-aged bourbon is harder to make well than long-aged Scotch, which typically uses refill wood.
Barrel size. Surface-area-to-volume ratio determines extraction rate. A smaller barrel extracts faster and it does not compress the oxidative processes — which is why small-barrel aging produces heavily oaked spirits that are not, in the other senses, mature.
Angel's share and concentration
Liquid evaporates through the wood and the rate depends on temperature and humidity.
In a hot dry warehouse, water evaporates faster than alcohol, so the proof can rise over time. In a cool humid one, the reverse.
And the loss is substantial. A hot warehouse loses far more liquid per year, which is a real economic cost of fast maturation and the reason fast maturation is not simply superior.
That cost is worth mentioning to a guest, because it makes the trade honest rather than promotional.
Finishing
A second barrel, usually briefly, after primary maturation. Sherry, port, wine, rum, or others.
A short finish can dominate the nose while the base spirit still determines the palate and the finish. Which means a finish is easy to over-read, and a bartender recommending on the finish note may be recommending on the smallest part of the liquid.
Taste past the top note.
Blending
Blending exists to produce consistency and to build a profile that no single barrel achieves.
It is a craft with a wide quality range and dismissing blends categorically is a category judgment substituted for evaluation, per Module 20.
And a single barrel is not automatically superior — it is more variable, which is a different property.
4. The Variables You Control
Nothing about maturation. What a bartender controls is the explanation, the comparison, and the purchase.
Set directly: what is bought, how age is explained, whether color is used as evidence.
Observed and responded to: oak character in the glass and its integration.
5. The Numbers
Thermal cycling drives extraction, not the calendar.

Smaller barrels extract faster and do not accelerate oxidation.
Hot warehouses lose more to evaporation — a real cost.
Color comes from wood contact, char, and sometimes additives. It is not an age indicator.
6. The Sensory Standard
Oak-derived character, identified. Vanilla and coconut from American oak lactones. Baking spice and tannin from European oak. Caramel and toast from the char layer. Coconut in particular is a reliable American-oak marker.
Well-integrated oak. The wood is present and it is part of the spirit rather than sitting on top of it. The finish resolves rather than drying out.
Over-oaked. Tannic and drying, with the spirit's own character buried. Bitterness on the finish rather than sweetness.
Fast, hot maturation specifically. Substantial wood character with less of the softened, integrated quality of long slow maturation. Assertive rather than seamless — and that description is accurate rather than pejorative.
What almost-right presents as
A spirit approaching over-oaked. The wood is prominent and it is still integrated, and the finish has begun to dry slightly. Some drinkers prefer exactly this and it is worth knowing that the next step is not preference but fault.
A finished spirit read on its finish. The nose is dominated by the finishing cask and the palate reveals a base spirit that is thinner than the nose promised. Tasting past the top note is what catches it.
