A long draft list in a room where three taps sell and nine do not.

That is the defining beer problem in these buildings, and it produces a specific and under-recognized failure: hop-forward beer sitting past its useful life while remaining perfectly within its date code.

A date code is a shelf-life limit. It is not a quality window, and for hop-forward styles the two are far apart.

Which means a regular who says an IPA tastes off, on a can that is well within date, is right — and the bar's instinct to check the date and reassure them is the wrong move.

And the module's harder finding: the staff cannot detect the decline, because everyone in the building has been tasting the beer daily as it faded. Their reference is yesterday. The guests who notice drink that beer elsewhere.

3. The Mechanism

Hop aroma degrades fast

The compounds that produce hop aroma are volatile and unstable, and they degrade continuously from packaging.

The timeline is weeks rather than months.

Which means a hop-forward beer can be entirely sound — no infection, no severe oxidation, safe and legal to sell — and have lost most of what made it worth ordering.

That is the gap between shelf life and quality window, and it is the module's central operational fact.

Temperature accelerates it substantially. Cold storage from receiving extends the window; warm storage compresses it dramatically.

Oxidation

Oxygen picked up at packaging or introduced later reacts with beer compounds over time.

Early on it reads as a papery, faintly sweet, cardboard-adjacent quality. Subtle, and it reads as dullness.

Later it becomes obvious — sherry-like, sometimes with a toffee or dark-fruit character that is not supposed to be there.

In a hop-forward beer, oxidation and hop fade arrive together and compound: the aroma leaves and the papery note arrives.

Light-strike

Ultraviolet light reacts with hop compounds to produce a sulfur compound that is chemically identical to a skunk's defensive spray.

It happens in minutes under direct light and it is irreversible.

Which is why beer is packaged in brown glass or cans, and why clear and green glass stored under light is a predictable failure.

The character is unmistakable once met and it is entirely a storage failure.

Staling and the freshness curve differs by style

Not every style declines at the same rate.

Hop-forward styles decline fastest, because the thing that defines them is the thing that degrades first.

Malt-forward and strong styles are considerably more stable, and some improve — high-alcohol beers can develop favorably over time.

Light lagers are stable in flavor terms and they show every fault that does appear, because there is nothing to hide behind.

Which means the ordering decision has to be style-specific, and a single reorder pattern across a long draft list is wrong for most of it.

Date coding

Date codes vary in what they mean — packaging date, best-by, or something else — and reading them requires knowing the brewery's convention.

And the code is a limit rather than a window. Rotating by date code is necessary and insufficient.

Rotate by packaging date and buy to velocity, which is the actual control.

The faults, and what each one is

Oxidation. Papery, cardboard, sherry-like, sometimes toffee.

Light-strike. Skunky. Unmistakable.

Diacetyl. Buttery, butterscotch, sometimes slick on the palate. A fermentation byproduct that yeast normally reabsorbs — its presence means the fermentation was rushed or cold-crashed early. Low levels are style-appropriate in a few cases and it is usually a fault.

Acetaldehyde. Green apple, sometimes a solventy edge. An intermediate compound the yeast should have converted — its presence means an incomplete fermentation.

Infection. Sour, tart, sometimes phenolic or barnyard. Distinguishable from an intentionally sour beer by whether the style calls for it, and by the fact that an infected beer usually gets worse in the container.

Dimethyl sulfide. Cooked corn or cooked vegetable. A boil or fermentation issue, and low levels are style-appropriate in some lagers.

And the two failures that come from the bar rather than the breweryline-sourced sourness per Module 32, and flatness or over-carbonation per Module 31. Those have to be distinguished from brewery faults, and the bottle-versus-tap test is how.

Why the staff cannot detect the decline

The same mechanism as the kitchen's standard drift and the bar's line-cleaning problem.

Everyone in the building is calibrated against yesterday, and yesterday's beer was almost identical to today's. The drift is below threshold at every step and enormous over months.

Which means the detection system is a guest's memory, and that is the problem rather than a feature.

The fix is an external reference: taste the light beer weekly, and taste bottled against tap on any systemic complaint.

4. The Variables You Control

Set directly: order quantity by style, storage temperature from receiving, storage light exposure, rotation method, whether kegs are tasted at tap, list length relative to velocity.

Observed and responded to: which beers generate complaints; whether the complaint is systemic or single-tap.

6. The Sensory Standard

A fresh hop-forward beer. Pronounced hop aroma — citrus, pine, tropical, or floral depending on variety. Bright, lifted, and the aroma arrives before the glass reaches the mouth.

A sound malt-forward beer. Malt character clean and appropriate to its kiln level, with no papery or sherried note.

A sound light lager. Clean, crisp, with no off character at all. Nothing to hide behind, which is why it is the diagnostic beer.

What almost-right presents as

A hop-forward beer a few weeks past its peak. Still tastes correct and slightly less bright. The aroma is reduced rather than absent. This is the state the staff will not catch and a regular will, and it is well within the date code.

Early oxidation. A faint papery note under the malt. Reads as dullness rather than as a fault and it passes.

Low-level diacetyl. A slight slickness on the palate and a faint butter note. Below the threshold for many people and above it for others, per Module 15's threshold variation.

What each failure presents as

Hop fade: flat, papery, faintly sweet, with the hop aroma gone. Within date.

Oxidation: papery, cardboard, sherried.

Light-strike: skunky, in clear or green glass stored under light.

Diacetyl: buttery, slick.

Acetaldehyde: green apple.

Infection: sour, tart, worsening.

Stock rotated by convenience: old product in front.

Michelada

Target: savory, spicy, refreshing.

Appearance. Deep amber-red with a substantial foam head, served over ice in a salted or chili-rimmed glass with a lime wedge. The head should stand — beer foam is a visible quality signal here.

Aroma. Lime and savory spice first, beer's malt underneath, chili and salt on the rim contributing. Should smell like something with weight.

Palate and finish. Savory on entry, lime acid cutting, spice building through the middle, beer's carbonation and malt carrying it. Salt on the rim sharpens everything and should be tasted deliberately with each sip. The finish is savory, spicy, and long.

At the edges. Regional variation in this drink is enormous and legitimate — the range from a simple beer-lime-salt build to a full savory mix is all defensible. The house spec should be written down because otherwise every bartender makes a different drink.

Out of standard. Flat with no head and a heavy savory body — the beer was poured too early or over-agitated. Overwhelmingly salty with the beer buried — the savory mix over-measured, or rim salt falling into the drink. Thin with the spice reading as heat without flavor — the mix has separated or was made without balance.


7. The Worked Example

A regular says an IPA tastes off. It is well within its date code.

The situation. Over a month remaining on the code. You taste it and it seems fine to you, maybe a little dull. Your other beers are not generating complaints. This IPA moves slowly — perhaps a case a month.

Is the guest wrong?
