Sour, Daisy and Margarita Systems

The sour is the most-sold structure in Texas and the most sensitive to an ingredient nobody can control.

1. The Controlling Idea

The sour is the most-sold structure in Texas and the most sensitive to an ingredient nobody can control.

2. Why This Matters in the Room

The margarita is the volume cocktail in this state. In a lot of these rooms it outsells everything except beer and whiskey highballs, and it is built on lime juice — which varies by season, by lot, and by individual fruit, in ways a written spec cannot capture.

That means the same recipe produces a measurably different drink in January than in July, and if nobody is correcting for it the bar spends half the year serving drinks that are slightly wrong and cannot say why.

Batching multiplies it. A margarita batch made with a sharp lime lot and no correction produces twenty wrong drinks instead of one, and the error can only be fixed at production.

3. The Mechanism

The structure

A sour is three elements in tension: spirit, acid, sweetener. Everything in the family is a variation on that triangle, and most of the canon is a sour wearing a different name.

Daiquiri — rum, lime, sugar. The reference case. Margarita — tequila, lime, orange liqueur, sometimes additional sweetener. A daisy, which is a sour with a liqueur in the sweetening role. Whiskey sour, gimlet, sidecar, bee's knees — the same triangle with different components.

Knowing the structure is what lets a bartender build one they have never made from a guest's description, which is the actual skill Module 34 teaches and this module applies.

The balance point and its range

The balance point is where the acid and the sweetener meet so that neither leads for long.

It is a range, not a value. A leaner build reads sharp and spirit-forward. A rounder build reads easy and approachable. Both are defensible and the house has to pick one, because the range is wide enough that two bartenders operating at opposite ends produce noticeably different drinks from the same written spec.

Citrus variability: the central problem

Module 12 established the mechanism. Here is what it means operationally.

Lime and lemon acidity vary by season, growing region, lot, and individual fruit. A spec that says a volume of lime juice specifies a volume, not an amount of acid.

So the correction has to happen against the day's fruit rather than against the recipe, and it happens on the sweetening axis — because the two intuitive alternatives are both wrong.

Adding spirit raises the alcohol against the same acid: harsher and stronger.

Cutting the citrus fixes the acid and unbalances the drink the other way, and it costs the juice's aromatic contribution, which is a real part of what a sour is rather than a side effect.

The habit: taste the day's juice at open and set the shift's syrup correction from it. Twenty seconds, and it eliminates most of the inconsistency in the family.

Juice age

Module 14 established that citrus shifts within hours — the aromatic top note goes first, then the acid profile moves.

The signature is worth carrying because it separates two failures that get confused: harsh means too much acid. Dull means old juice. A drink that is dull will not be improved by any balance correction, because the problem is a missing aromatic rather than a misplaced ratio.

Juice in waves through the shift. The proof is a side-by-side taste of morning juice against fresh, which settles it permanently in ten seconds.

Dilution in a sour

A sour wants more dilution than a stirred drink and it wants it fast, along with aeration and a hard chill. That is what shaking delivers.

Under-shaken leaves the drink cold and unintegrated — the citrus reads separately from the spirit rather than as a single flavor, and the foam is thin and disappears immediately.

Over-shaken past full chill adds only dilution and air. Thin, watery, over-foamed, with the citrus muted.

The endpoint is the tin fully frosted. Feel it.

Egg and aquafaba

Protein in the drink creates a stable foam and a silky texture.

The dry shake — shaking without ice first — is not optional and it is where this fails. The protein needs mechanical shear to unfold and build structure, and ice chills it before that can happen. Shake with ice from the start and you get a coarse, large-bubbled foam that collapses within thirty seconds.

Correct sequence: dry shake hard, then shake with ice.

Aquafaba functions similarly and produces a slightly different, somewhat less stable foam. It is a real option rather than a compromise, and it matters for guests who will not consume raw egg.

Raw egg service requires the venue's consumer advisory and the local health authority's requirements govern.

The rim

A salt rim is an ingredient, not a garnish, and it is the most under-specified variable in the margarita.

Full, half, or none changes the drink substantially. Salt suppresses bitterness and amplifies perceived sweetness, so a rimmed margarita and an unrimmed one are differently balanced from the same liquid.

Grind size matters too. Fine salt dissolves fast and reads saltier early; coarse salt lasts through the drink.

If one bartender rims generously and another lightly, that alone can account for "tart" versus "about right" — and it will never be found by examining the liquid.

Batching

Covered fully in Module 43. Two points belong here.

The correction happens at production. A batch made without adjusting for the day's fruit is twenty wrong drinks and there is no fixing them at the glass.

Citrus batches have a short window. A batch correct on Friday is dull on Saturday, because the citrus in it is aging on its own clock regardless of the batch's other components.

4. The Variables You Control

Set directly: spirit and proof, citrus quantity, sweetener quantity and type, shake duration and vigor, ice quantity, dry shake if protein is involved, rim format, batch dilution.

Influenced indirectly: the balance, through dilution, which moderates perceived acid.

Observed and responded to: the day's citrus acidity; the juice's age; the guest's rim preference.

5. The Numbers

The balance point is a range, and the house picks a position in it.

Taste the day's juice and adjust the sweetener. This is the operative number and it changes.

The tin fully frosted is the shake endpoint.

Dry shake first, then with ice, for anything with protein.

6. The Sensory Standard

A correct margarita. Pale yellow-green, hazy from the lime, with a thin foam that settles quickly. Aroma is lime first — bright and fresh — with cooked agave underneath and orange liqueur bridging. Tart on entry, agave through the middle, sweetness holding the frame, salt sharpening if the rim is there. Clean, moderately short finish with the agave persisting.

A correct Daiquiri. Pale, faintly hazy, thin white foam settling to a ring within about thirty seconds. Lime unmistakably fresh on the nose. Tart on entry with sweetness immediately behind, rounding the acid rather than covering it. Clean and dry — it should not coat the mouth.

A correct egg sour. Dense white foam standing a quarter of the way down the glass and holding, tight and fine-bubbled. Silky on entry, with the texture outlasting the flavor.

What almost-right presents as

Slightly over-acid. Tart, with a finish that is a shade short and hollow. The sweetness is present but does not quite meet the acid and there is a small gap in the middle where nothing is happening. This is what a sharp lime lot produces at a correct spec and it is the single most common state of a margarita in this state.

Slightly under-acid. Flat, slightly cloying, with a finish that goes on without lift.

Under-shaken. Cold and not integrated — the citrus reads separately from the spirit. Foam thin and gone in seconds.

Foam that will not last. Dry shake was short. It looks correct at the pass and the pattern has sunk by the time it reaches the table.

What each failure presents as

Citrus uncorrected: consistently tart or consistently flat across a whole shift or batch.

Corrected on the wrong axis: harsher and stronger, or flat and short.

Old juice: dull, cooked, one-dimensional.

Over-shaken: thin, watery, muted citrus, coarse foam.

Rim inconsistent: the same drink reading differently between bartenders with identical liquid.

Batch aged: correct Friday, dull Saturday.

Formula standards governed by this module

Bee's Knees

Target: floral, honeyed, citrus-lifted.

Appearance. Pale gold, slightly hazy from the citrus, with a fine short-lived foam that settles within a few seconds. Clean but not brilliant — perfect clarity in a shaken citrus drink means the citrus is old.

Aroma. Honey first, then juniper and the gin's supporting botanicals, then lemon. The honey should smell like honey, not like generic sweetness — if the syrup was cut too thin, this is where it disappears.

Palate and finish. Honey leads and immediately meets lemon acid. Gin structure carries underneath. The finish is floral with a lingering honey sweetness that should not turn cloying. Medium body — heavier than a Daiquiri, lighter than a sour with egg.

At the edges. Low honey: the gin becomes the lead and the drink reads as a lemon gin sour with a faint sweetness — crisper, less characteristic. High honey: the texture thickens noticeably, the botanicals recede, and the finish lengthens. Neither is wrong; the drift matters because it happens gradually as syrup batches vary.

Out of standard. Cloying and heavy with a flat finish — honey syrup made too thick, or lemon that has lost acid. Harsh, with the gin reading hot and separate — under-shaken; the drink was chilled but not integrated. Sweet without honey character — the syrup was over-diluted, or the honey is a neutral commodity product rather than one with flavor.


Caipirinha

Target: bright, grassy, lime-forward.

Appearance. Cloudy and pale, with lime pulp and sugar visible in suspension and lime pieces in the glass. This drink is supposed to look rustic. Perfect clarity means the lime was not worked.

Aroma. Fresh lime, including the peel oil, over cachaça's distinctive grassy and slightly funky note. The peel oil is the point — a caipirinha that smells only of juice was under-muddled.

Palate and finish. Tart and immediate. Sugar present but not dominant. Cachaça's vegetal character running underneath. Texture is slightly heavy from the undissolved sugar and pulp. The finish is short, tart, and clean.

At the edges. At the low end of sugar the drink is aggressively tart and the cachaça's rough edges show — some rooms want exactly that. At the high end it rounds out and the grassiness softens. The muddle intensity moves it as much as the sugar does.

Out of standard. Bitter with a green, harsh edge — over-muddled, and the lime pith has been crushed into the drink. This is not recoverable; remake. Gritty and unbalanced, sweetness pooling at the bottom — sugar never dissolved; the muddle did not do its job before the ice went in. Watery and thin — ice added too early or the drink sat before service.


Clover Club

Target: berry, dry, silky.

Appearance. Pale rose-pink with a dense white foam cap standing a quarter of the way down the glass and holding. The foam should be tight and fine-bubbled, not coarse and quickly collapsing. Color depth depends on the raspberry component; it should read pink, not red.

Aroma. Raspberry over gin botanicals, with the lemon lifting both. The egg contributes a faint richness rather than a smell of its own — if you can smell egg, something is wrong with the product or the shake.

Palate and finish. Silky and full on entry from the protein. Berry through the middle, dry rather than jammy. Gin structure underneath. The finish is dry and moderately long, with the texture persisting after the flavor fades.

At the edges. More raspberry pushes it toward fruit-forward and slightly sweeter; less pushes it toward a dry gin sour with a color. The foam density varies with dry shake duration more than with anything in the formula.

Out of standard. Thin foam collapsing within thirty seconds — dry shake too short or skipped entirely. The most common defect in this drink. Coarse, large-bubbled foam — shaken with ice from the start; the protein never got the shear it needed before dilution. Flat pink with no lift and a heavy sweetness — raspberry syrup too sweet or the lemon too old. A faint sulfur or wet-paper note — the egg is not fresh. Discard and check the whole case.


Daiquiri

Target: tart, clean, rum-forward.

Appearance. Pale, faintly hazy, with a thin white foam that stands briefly and settles to a ring at the edge of the coupe within about half a minute. Complete clarity means the lime is old. Persistent heavy foam means it was over-shaken.

Aroma. Lime first and unmistakably fresh — that bright, slightly sweet peel-and-juice smell that day-old juice does not have. Rum underneath, with its cane character present. Nothing else should be findable.

Palate and finish. Tart on entry, sweetness arriving immediately behind it and rounding the acid rather than covering it. Rum through the middle. The finish is clean, moderately short, and dry — a Daiquiri should not leave the mouth coated. Temperature should be genuinely cold, and the cold is part of the flavor.

At the edges. Low syrup: sharp and lean, rum reading more aggressively, finish shorter. High syrup: round and easy, lime pushed back, texture slightly heavier and the finish longer. Both are inside a defensible house spec, and this is the axis most affected by the day's limes — the same measure produces a different drink in January than in July.

Out of standard. Harsh, hot, and disjointed with the rum separate from everything else — under-shaken. The drink is cold but was never integrated. Flat, watery, with a muted lime — over-shaken on soft or wet ice; the drink diluted past its target and lost the top note. Dull lime that reads sweet-sour rather than bright — juice held too long. Squeeze fresh and compare side by side; the difference is obvious and it is the whole drink. Cloying with a syrupy tail — syrup made by volume rather than by weight, running rich.


Gimlet

Target: crisp, lime, clean.

Appearance. Pale, faintly hazy, served up with a thin foam ring or over ice by house spec. Clean and pale — this is a drink with nowhere to hide.

Aroma. Lime forward, gin botanicals directly behind it. Simple and legible. If the nose is muddy, the lime is old.

Palate and finish. Crisp and tart on entry. Sweetness immediately behind, integrated rather than layered. Juniper through the middle. The finish is clean, dry, and short.

At the edges. Sweeter builds read rounder and less demanding; drier builds put the gin's botanicals fully forward and are less forgiving of a mediocre gin. The lime-versus-cordial decision changes the drink more than the ratio does and should be a written house choice, not a bartender's preference.

Out of standard. Sharp and hollow with a hard edge — under-sweetened, or the lime is unusually acidic that week. Dull with a cooked-lime note — cordial or juice past its window. Hot with the gin standing apart — under-shaken or under-stirred. Watery with a short, weak finish — over-diluted from wet ice.


Jungle Bird

Target: bitter, tropical, balanced.

Appearance. Deep red-brown over crushed or cubed ice by house spec, with the pineapple contributing a slight opacity and a fine foam ring at the surface. Should look tropical without looking artificial.

Aroma. Pineapple first, bitter orange from the Campari behind it, dark rum's molasses underneath. Three distinct layers.

Palate and finish. Tropical fruit on entry, bitterness arriving through the middle and building, rum's molasses depth on the back. The finish is bitter and long — this is the only tiki-adjacent drink where bitterness is the point rather than an accent.

At the edges. More Campari pushes bitterness forward and shortens the fruit; less lets the pineapple dominate and the drink drifts toward a standard tropical build. The rum choice matters — a heavier blackstrap style changes this drink substantially.

Out of standard. Sweet and flat with the bitterness buried — pineapple juice too sweet, or the Campari measure short. Harsh and thin with bitterness sitting on top — under-shaken; the components never integrated. Muddy brown with no distinct layers on the nose — juice from concentrate, or juice that has been open too long.


Last Word

Target: herbal, tart, complex.

Appearance. Pale green-gold, slightly hazy, served up with a thin foam ring. The green comes from the Chartreuse; the depth of it tells you whether the ratio held.

Aroma. Chartreuse's herbal complexity dominant, maraschino's nutty cherry underneath, lime over the top, gin structural. Dense and layered — this is an aromatically busy drink and it should be.

Palate and finish. Herbal and sweet on entry, lime acid cutting immediately, maraschino's funk through the middle, gin holding the frame. The finish is long, herbal, and complex with a faint bitterness.

At the edges. The equal-parts build is unforgiving. Small deviations show. Slightly more lime reads sharper and cleaner; slightly more Chartreuse reads heavier and sweeter and can go medicinal fast.

Out of standard. Medicinal and cloying — Chartreuse over-measured, or the maraschino is a cheap substitute. Thin and sharp with the herbs disappearing — over-diluted, which flattens Chartreuse faster than it flattens anything else in the build. Muddy with no distinct layers — under-shaken, or lime past its window.


Mai Tai

Target: nutty, citrus, rum-layered.

Appearance. Amber-brown over crushed ice, with a mint sprig and lime shell by house spec. Should look built rather than poured — the crushed ice and the garnish are part of the specification, not decoration.

Aroma. Mint from the garnish first, because it sits under the nose. Then orgeat's almond, then lime, then the rum blend's molasses and funk.

Palate and finish. Nutty and rich on entry from the orgeat. Lime acid cutting through. Orange liqueur bridging. Rum depth building through the middle and finishing long. The texture should be noticeably fuller than other citrus drinks — orgeat is doing structural work.

At the edges. More orgeat: richer, nuttier, heavier, and the lime recedes. Less: brighter and more rum-driven, thinner in the mouth. The orgeat's own quality moves this drink more than the ratio — a thin commercial syrup and a proper house orgeat make two different drinks from the same spec.

Out of standard. Thin and sharp with no nutty body — orgeat under-measured or over-diluted. Orgeat is the whole texture of this drink. Cloying with the rum buried — orgeat and liqueur both running high. Watery within two minutes of service — crushed ice made from wet ice, or the drink was built ahead. A rancid or off note in the almond — orgeat past its shelf life. Orgeat contains fat and it goes off; check the date and taste the syrup on its own.


Margarita

Target: tart, agave-forward, balanced.

Appearance. Pale yellow-green, hazy from the lime, with a thin foam that settles quickly. Salt rim per house spec — full, half, or none, but consistent. If the rim is inconsistent between bartenders, the drink is inconsistent regardless of the liquid.

Aroma. Lime first, bright and fresh. Agave underneath — cooked agave's vegetal sweetness should be findable. Orange liqueur bridging the two.

Palate and finish. Tart on entry, agave arriving through the middle, sweetness holding the frame, salt sharpening everything if the rim is there. The finish is clean and moderately short with the agave persisting.

At the edges. This is the drink most affected by citrus variation in the entire bar program. The same written spec produces a noticeably sharper drink with January limes than with July limes, and the correction is a real adjustment rather than a rounding error. At the low-sweet end it reads lean and aggressive; at the high end it rounds out and the agave recedes. Taste the day's juice before service and adjust the syrup, not the lime.

Out of standard. Tart to the point of hollow, with no middle — the day's limes are sharp and nobody adjusted. Correct on the sweet axis, not by adding more tequila. Sweet and flabby with a candy note — orange liqueur running high or a low-quality one substituted. Thin and watery with a short finish — over-shaken on wet ice, or a batch that was diluted at production and diluted again in the tin. Sweet and viscous with little agave character — the tequila contains additives. Taste the tequila neat against a known reference; this is a product problem, not a build problem.


Paper Plane

Target: bitter, citrus, balanced.

Appearance. Deep orange-amber, slightly hazy from the lemon, served up. The color is distinctive and a good check on the ratio — pale means the amaro or Aperol measure is short.

Aroma. Bitter orange and herbs first, bourbon underneath, lemon over the top. Layered and moderately dense.

Palate and finish. Bitter-sweet on entry, lemon acid cutting through the middle, bourbon's oak and sweetness on the back, amaro's herbal bitterness persisting. The finish is long and bitter.

At the edges. Equal parts, so nothing hides. More bourbon: warmer and drier. More amaro: heavier and more bitter with a longer finish. More lemon: sharper and shorter.

Out of standard. Sharp and thin with the bitterness reading as a hard edge — over-diluted or under-shaken. Cloying with a medicinal note — the amaro is doing too much, or a substitute amaro with a different bitterness profile went in without a spec change. Dull with the lemon flat — old juice.


Penicillin

Target: smoky, honeyed, ginger-warm.

Appearance. Golden-amber, hazy, over ice, with a distinct darker float of peated Scotch sitting on the surface. The float should be visible as a layer. If it has mixed in, the drink was built wrong or shaken after the float.

Aroma. Peat smoke first and unmistakably — this is the float doing its job, delivering smoke to the nose before anything reaches the tongue. Ginger and honey underneath, lemon brightening.

Palate and finish. Ginger warmth and honey sweetness on entry, lemon acid cutting, blended Scotch's malt through the middle, and the smoke arriving on the finish rather than the front. The finish is long, smoky, and warm. The architecture of this drink is smoke-on-the-nose, ginger-on-the-palate, smoke-again-on-the-finish.

At the edges. More ginger reads spicier and sharper; more honey rounds it and lengthens it. The peated float quantity moves the smoke intensity substantially and is the axis guests notice most.

Out of standard. Smoke throughout with no distinct layers — the float mixed in, either from a careless pour or from stirring after. The drink is still drinkable and it is not the drink. No smoke on the nose — float too small or poured before the ice settled. Sharp and thin with the honey lost — honey-ginger syrup too dilute, or made without enough ginger. Cloying with the ginger reading candied — syrup made too sweet or with old ginger.


Sidecar

Target: tart, rich, brandy-forward.

Appearance. Pale amber, slightly hazy, served up with a sugar rim per house spec. The rim should be even and partial rather than heavy and complete unless the house has decided otherwise.

Aroma. Brandy's fruit and oak first, orange liqueur behind it, lemon over the top.

Palate and finish. Tart on entry, brandy's richness arriving through the middle, orange bridging, sugar rim sharpening each sip if present. The finish is warm, moderately long, and dry.

At the edges. Brandy quality moves this drink substantially — a VS reads sharper and hotter, a VSOP rounder with more oak. The lemon-to-liqueur ratio decision separates a lean, tart house style from a rich, rounder one.

Out of standard. Harsh with the brandy reading hot and separate — under-shaken, or a young brandy in a spec written for an older one. Cloying with a candied orange note — liqueur running high, or a low-grade triple sec. Dull with a flat lemon — old juice.


Tom Collins

Target: bright, sparkling, gin-lifted.

Appearance. Pale, slightly hazy, tall, with an active bead and a full ice load, lemon and cherry per house spec. Foam ring at the top if built correctly.

Aroma. Lemon and gin botanicals lifted by carbonation. Bright and open.

Palate and finish. Tart on entry, sweetness underneath, gin structural, carbonation running the length. The finish is clean, short, and refreshing.

At the edges. More soda reads lighter and longer; less reads closer to a gin sour. Sweetness moves it from lean to rounded.

Out of standard. Flat and heavy — carbonation lost, usually from stirring after the soda went in. Build the sour base, add ice, add soda, and do not stir more than once. Watery with the lemon and gin both muted — insufficient ice or a warm glass. Dull — old lemon.


Whiskey Sour

Target: tart, balanced, whiskey-forward.

Appearance. Amber-gold, hazy, with a foam cap if the house spec includes egg — dense and standing if so, absent and clean-surfaced if not. Both are legitimate; the house has to choose and the choice has to be visible on the menu.

Aroma. Lemon first, whiskey's oak and grain underneath, sweetness rounding. If egg is in the build, a faint richness rather than an egg smell.

Palate and finish. Tart on entry, sweetness immediately behind, whiskey through the middle with its oak arriving on the back. The finish is warm, moderately long, and dry. With egg, the texture is silky and the finish lengthens.

At the edges. Sweeter builds round the whiskey's edges and read easier; leaner builds expose the whiskey and demand a better one. The egg decision changes texture and length more than it changes flavor.

Out of standard. Harsh and hollow with a hard acid edge — under-sweetened for the day's lemon. Hot with the whiskey separate — under-shaken. Thin foam collapsing fast, when egg is specified — dry shake skipped. Dull with the lemon reading cooked — old juice.


Part Two: The Components

A component that is out of standard makes every drink that contains it out of standard, in the same direction, until someone tastes the component itself. That is why these get sensory standards at all.

7. The Worked Example

Margaritas inconsistent between three bartenders, resolved.

The situation. Same written spec. Everyone jiggers. Same juice from the same batch. One runs tart, one runs sweet, one is about right, and all three are certain they are following the spec.

What that eliminates. The juice and the liquid measures are shared, so the variation is entering somewhere that is not being measured.

I check four things in order, because the first two are mechanical and cheap.

The jiggers. Three bartenders, possibly three jiggers. Capacities vary between manufacturers and the fill line is not always where the marking implies. I fill each with water into a graduated cylinder. Two minutes, and it either finds the answer or eliminates it permanently.

How they are read. Filled to the rim, to a line, to a meniscus — three different volumes, and nobody has ever been shown which one the house means. I watch three pours rather than asking, because asking produces the procedure people believe they follow.

Dilution. This is the largest source and nothing measures it. Shake duration, vigor, ice quantity, and ice condition all vary, and dilution is a full ingredient in a margarita by volume. A hard forty-count shake and a gentle twenty-count produce noticeably different drinks from identical liquid.

And it maps onto the symptom: the one running tart is likely under-diluted, the one running sweet over-diluted, because dilution moderates acid perception more than it moderates sweetness.

The rim. Nobody counts it and it changes every sip. One generous rim and one light rim can account for the whole spread on its own.

What I actually find. Two jiggers of different capacity, and a real difference in shake between the three.

The deeper finding, which is the point of the exercise. There is no reference. Three people are each building to their own idea of correct with no way to resolve a disagreement, because a written spec that specifies quantities has specified perhaps seventy percent of the drink.

The fix. Build the reference — one drink to the house standard with the dilution, the rim, the ice, and the glass all decided. Everyone tastes it at once. Then each builds one and all are tasted blind alongside it, with the differences named aloud. Twenty minutes, and it does more than any spec revision.

Then rewrite the spec to include what it was missing.

10. Volume Pressure

At a set break nobody is tasting anything, and the batch made at four is being poured at nine to three hundred people.

What can flex: nothing in service, because the correction window is at production.

What cannot: the correction window itself. A batch is fixed at production or it is not fixed, which is the entire argument for the twenty seconds at open.

11. The Diagnostic

Full scenario below. Three bartenders, same spec, same jigger practice, same juice, three different drinks. The reasoning runs jigger capacity, jigger reading, dilution, and rim — and lands on the absence of a reference as the underlying condition.

The scenario, in full

The scenario. Margaritas are inconsistent between bartenders. Three people work the bar and all three follow the same written spec, jigger every ingredient, and use the same juice from the same batch. The drinks are noticeably different from each other — one runs tart, one runs sweet, one is about right.

Same spec, same jigger, same juice, three different drinks. Where is the variation entering?

The reasoning.

Every ingredient is measured with a jigger from the same batch of juice, so the liquid quantities should be identical. If the drinks differ, the variation is entering somewhere that is not being measured.

There are four candidates and they are worth checking in this order, because the first two are mechanical and the second two are technique.

One: the jiggers are not the same. Three bartenders, possibly three jiggers. Jigger capacities vary between manufacturers and the fill line is not always where the marking implies. A bar running a mix of jiggers is running a mix of measures while everyone believes they are measuring precisely.

Check: fill each jigger with water and pour into a graduated cylinder. Two minutes, and it either finds the answer or eliminates it permanently.

Two: the jiggers are being read differently. Filled to the rim versus filled to a line versus filled to a meniscus is a real difference, and nobody has ever been shown which one the house means. This is invisible because each person is confident they are doing it right.

Check: watch three pours. Do not ask.

Three: dilution. This is the largest source and it is not measured by anything. Shake duration, shake vigor, ice quantity, and ice condition all vary between people, and dilution is a full ingredient in a margarita by volume. A hard forty-count shake and a gentle twenty-count shake produce noticeably different drinks from identical liquid measures — one more diluted and softer, one less diluted and sharper.

That maps directly onto the described symptom: the drink that "runs tart" is likely under-diluted, and the one that "runs sweet" is likely over-diluted, because dilution moderates the acid perception more than it moderates the sweetness.

Check: have all three build one, and taste the three side by side while watching the shakes.

Four: the salt rim. Nobody counts it as an ingredient and it changes the drink substantially. A full rim, a half rim, a heavy coarse salt, and a light fine salt produce four different drinking experiences from the same liquid. If one bartender rims generously and one lightly, that alone can account for "tart" versus "about right."

Check: look at three rims.

Now, the deeper finding, which is what the scenario is really about.

There is no reference. Three people are each building to their own idea of correct, and they have no way to resolve a disagreement because nothing exists to compare against. The spec on paper specifies quantities and quantities are not the whole drink.

The fix. Build the reference. One drink, made to the house standard, tasted by all three at the same time, with the dilution and the rim treated as part of the specification rather than as personal style. Then calibrate: each person builds one, all four are tasted blind, and the differences get named out loud.

That session takes twenty minutes and it does more than any written spec revision.

What to rule out. The juice — same batch, and a juice problem would affect all three equally. The tequila — same bottle. Guest perception — the bar itself can see the difference, which makes it real.


12. The Practice Protocol

Exercise one: the citrus log. Taste the day's lime alone at open and record sharp, standard, or soft. After a season you have a calendar of your supply's behavior.

Exercise two: the split-sample habit. Never correct a drink or a batch without splitting a sample first. Slow twice, then obvious.

Exercise three: the shake ladder. Build the same sour at three shake durations. Taste all three. Find where the tin frost and the correct dilution actually line up.

Exercise four: the dry shake comparison. Build two egg sours, one with a proper dry shake and one shaken with ice from the start. Look at both foams at thirty seconds and at two minutes.

Exercise five: the rim test. Same drink, full rim, half rim, no rim. Taste all three. Then decide what the house does and write it down.

What to expect. After exercise one a bartender stops being surprised by seasonal drift. After exercise five the rim stops being a personal style.

What this cannot teach. The distinction between a drink that is tart and one that is under-diluted. Both read sharp. That comes from the shake ladder run against a known-correct reference.
