Ticket Management, Round Building and Multitasking

2. Why This Matters in the Room

Rounds are large here. A dancehall table sends one person to the rail for six drinks, which makes round construction the dominant speed variable rather than individual drink speed.

And it makes the sequencing decision consequential in a way it is not at a cocktail bar — because a drink built first sits while five more are made, and some drinks survive that wait and some do not.

Which means the same round built two ways produces two different sets of drinks, and only one of them is correct.

3. The Mechanism

Group by build, not by order

Like builds share motions.

Three highballs built together is fewer transitions than three highballs interleaved with a stirred drink and a sour, per Module 48.

Which means the first move on a round is to sort it — all the highballs, all the shaken drinks, all the stirred drinks, all the beers.

Sequence by lifespan

This is the module's most important content and it inverts the intuitive order.

Some drinks degrade on the rail and some do not.

A beer poured first is fine. A spirit-forward drink over a large cube built first is diluting for the entire time the rest of the round is made, per Module 35.

A shaken sour built first is losing its foam and its chill.

A carbonated highball built first is losing carbonation, per Module 38.

So the sequence is: longest-lived first, shortest-lived last.

Beers and anything served without ice first. Then stirred drinks. Then shaken. Then carbonated, last, immediately before the round goes out.

Which is frequently the reverse of the order the guest said them in, and it is the reason a round built in ticket order arrives partly wrong.

Holding position

A bartender working multiple rounds has to hold position in each one.

Which means the rail's physical organization is a memory aid — drinks grouped by round, in a consistent position, so the sequence is visible rather than remembered.

A rail with drinks scattered is a rail that requires attention to read, and that attention is not available at a break.

Ticket accuracy in noise

Per Module 8, voice fails during a set.

Which means the read-back is not a courtesy — it is the only verification available, and a misheard modification is a remake at best.

Read back anything with a modification or an unfamiliar term.

Interruption handling

A bartender mid-round who is interrupted has to be able to resume, which requires the rail's organization to carry the state.

And interruptions are constant — a question, a card, a guest at the far end.

The bar that survives them is the one where the rail shows what is done and what is not.

Prioritization

Not first come first served, and saying so plainly is useful.

A beer takes seconds and a shaken round takes minutes. Serving the beer first gets one guest served and costs the round almost nothing.

Which is a defensible efficiency and it has a limit — a guest who has been waiting and watches three people served ahead of them has a legitimate complaint, and Module 8's acknowledgment is what prevents it.

4. The Variables You Control

Set directly: grouping, sequencing, rail organization, read-back practice, prioritization rules, how interruptions are handled.

Observed and responded to: which drinks in the round are shortest-lived; the rail's readability.

5. The Numbers

Group by build. Sequence by lifespan.

Longest-lived first, carbonated last.

Read back any modification.

Organize the rail so it carries the state.

6. The Sensory Standard

A correct round. Every drink at its intended condition when the round leaves — the carbonated one still active, the shaken one still foamed, the spirit-forward one not over-diluted.

Which is the standard and it is only achievable by sequencing.

What almost-right presents as

A round built in ticket order. Every drink is technically correct and the first one built has been sitting for two minutes. In a spirit-forward drink over a large cube that is real additional dilution; in a highball it is lost carbonation.

The guest will not name it and the round is measurably worse.

A rail that requires reading. The bartender pauses and looks. Two seconds per round, and it compounds.

What each failure presents as

Built in ticket order: the first drink degraded, consistently.

Not grouped: more transitions than the round requires.

Rail disorganized: position lost after an interruption, drinks made twice or not at all.

Modification not read back: a remake, or on an allergen ticket something worse.

7. The Worked Example

Slow rounds despite fast individual drinks.

The situation. Each drink is built quickly and correctly. Rounds take longer than they should and the drinks that arrive are not all at their best.

Two problems and they have the same cause.

The round is being built in the order the guest said it.

Which produces both symptoms.

On speed: like builds are not grouped. A highball, then a stirred drink, then another highball, then a sour, then a beer — that is four transitions between task types, each one a pickup, a decision, and a reset. Grouping them — all the highballs, then the stirred, then the shaken — removes most of those.

On quality: the drinks have different lifespans and the order ignores it.

A spirit-forward drink over a large cube built first is diluting for the whole time the rest of the round is made, per Module 35. A shaken sour is losing foam and chill. A carbonated highball is losing carbonation, per Module 38.

So the round arrives with its first drink degraded — and the guest who ordered first gets the worst drink, which is a small injustice nobody notices.

The fix is one sorting step and it costs nothing.

Group by build. Sort the round into like builds before starting.

Then sequence by lifespan: longest-lived first, shortest-lived last.

Beers and anything without ice first. Stirred drinks next. Shaken next. Carbonated last, immediately before the round goes out.

Which is frequently the reverse of the order the guest said them in, and that is the point — the guest's order is a list of what they want, not an instruction for the order to build it.

And a rail organization note that makes it survivable. Drinks grouped by round in a consistent position, so an interruption does not cost the sequence — because the rail carries the state rather than the bartender's memory.

What I rule out. Individual drink speed, which is stated as fast — and which is the thing everyone measures and the thing that was not the problem. And staffing, which may be true and does not explain why the drinks arrive unequal.

10. Volume Pressure

Rounds get larger at a break, which makes the sequencing decision worth more.

What can flex: prioritization — serving a beer out of order is a defensible efficiency.

What cannot: the read-back on a modification. Especially on an allergen, per the kitchen's Module 51.

11. The Diagnostic

12. The Practice Protocol

Exercise one: sort one round before building it. Count the transitions saved.

Exercise two: build one round in ticket order and one sequenced. Taste the first drink from each.

Exercise three: organize the rail by round for a week and note whether interruptions cost less.

Exercise four: read back every modification for one shift and count the remakes.

Exercise five: rank your menu by lifespan on the rail. That ranking is the sequencing rule.

What to expect. Exercise two is the demonstration, and exercise five produces the rule the bar can actually use.
