And the failure this capstone is built around is not a technique failure. It is a plan with no slack — where two ordinary problems arrive in the one window the night has no margin in.
3. The Mechanism
The night's structure
Doors. Support act. Changeover. Headliner. First break. Second break. Last call. Close.
Every one is a demand event with a known time.
And each has a different character. The changeover is a spike. The breaks are the two largest. Last call is a final one with a different shape — people buying to finish rather than to start.
What a plan has to cover
Five things, and each has a module behind it.
Staffing by interval, per Module 50 — not to an average.
Prep and batching, per Modules 42, 43, and 47 — including what gets batched and what gets labeled.
Staging, per Module 50 — the last ten minutes of a set are the most valuable ten minutes of the night.
The reset, per Module 50 — a named owner, a written list, and a deadline inside the set.
And the ceilings — ice production, glass cycle time, and the number of hands, per Modules 4 and 9.
Single points
The concept the capstone is built on.
A single point is a resource with no alternate path. One draft system with no packaged fallback decided. One frozen machine. Staffing with no reserve. One person who knows a procedure.
A single point is not a problem until it fails, which is exactly why nobody finds them by waiting.
They are found by asking, in advance, what the plan cannot survive.
Why simultaneous failures compound
Because they consume the same scarce resource — attention and hands — in the same window.
A draft failure at two in the afternoon is an inconvenience. At nine-fifteen it is a crisis, because the window to diagnose it, work around it, and communicate the workaround is the window that was reserved for staging the surge.
And a staff member off position removes the capacity that would have absorbed it.
The pre-authorized simplification
The capstone's most useful single provision.
A menu cut by choice is better service than a full menu executed badly.
Suspending the three slowest builds for twenty minutes, announced to the servers and the door, produces faster service and consistent drinks.
And pre-authorizing it is what makes it choosable under pressure — because a bartender who has permission will make that call at the right moment, and one who does not will keep trying.
Communication in a building where voice fails

Whatever the contingency plan is, it has to reach the servers, the door, and the satellite bar in a form that works during a set.
A plan that depends on telling people is a plan that fails at the moment it is needed.
After the night
The review is where the capstone becomes a practice rather than an event.
What was the actual sales curve by interval. Where did the ceilings bind. Which single points were exposed. What would have to be true next time.
And that review is what turns one sold-out Saturday into a plan for the next one.
4. The Variables You Control
Set directly: everything upstream — staffing, prep, batching, staging, the reset, the contingency plan, the simplification authority, the communication method.
Observed and responded to: the set list; the actual demand curve; where the night bound.
5. The Numbers
Staff by interval, not by average.
Stage in the last ten minutes of a set.

6. The Sensory Standard

What almost-right presents as
A plan that covers the expected and not the unexpected. Staffing right, prep right, staging right — and no answer for the fryer, the draft system, or the callout.
It works on most nights, which is the problem: a sold-out Saturday is not most nights.

Staffed to average: long waits confined to the break windows.
Not staged: bartenders leaving the well during the surge.
No reset: a second break materially worse than the first.
Single point failed: a category of the menu unavailable with no decided fallback.

7. The Worked Example
A sold-out Saturday. At nine-fifteen the draft system starts foaming on every tap. At nine-forty an incident takes the door person and a bartender off position for twenty-five minutes. The first break is at nine-fifty.
Everything was planned — batches made, staffing to the spike, satellite bar stocked, ice bagged ahead.
Neither failure is catastrophic alone. Together the night is in serious trouble, and the reason is the timing.
They consume the same scarce resource in the same window.
A draft failure at two in the afternoon is an inconvenience. At nine-fifteen it is a crisis, because the window to diagnose it, work around it, and communicate the workaround is exactly the window that was reserved for staging the surge.
And the incident removes two people during that same window — including the door person, who is one of the few positions that could have absorbed some of the draft problem or run the communication to the front of house.
So at nine-fifty the bar meets three hundred people with a broken draft system, an unstaged well, two people who have just returned from something stressful, and no plan.
Now the draft diagnosis, because there is one inside the scenario.
Every tap foaming at once, suddenly, mid-service, points at something systemic rather than at a line or a keg. Per Module 31: a gas regulator failure or a cylinder swapped incorrectly, a cooling failure in the keg box, or someone having adjusted the pressure.
Every tap simultaneously is the tell — a single line or single keg problem does not do that.
And worth knowing before the night: who can diagnose this, and are they reachable? If the answer is a service company that does not answer on a Saturday, that is a single point and it was one all along.
What should have been written down. Four questions, answered before the doors opened.
What happens if the draft system goes down? Which packaged product substitutes for which taps, whether pricing changes, who tells the front of house, who calls for service. If the room's beer program is mostly draft, this is the highest-impact single failure available and it deserves the most detailed answer.
What happens if a staff member is off position for twenty minutes? Who covers, what gets dropped, who decides. An incident in a music venue is not a rare event and the plan should treat it as expected.
What happens if the crowd exceeds the ticket count? Walk-ups and guest list are real.
What happens if the bar meets the break unprepared? A pre-authorized simplification — which drinks get suspended and who announces it.
Every one of those takes twenty minutes on a Thursday.
The recovery tonight, since the night still has to happen.
Decide the draft substitution immediately and tell everyone. Do not spend the surge window diagnosing — diagnose after.
Consolidate the remaining staff onto the constrained positions.
Simplify deliberately rather than letting the menu degrade by accident. A menu cut by choice at nine-fifty is better service than a full menu executed badly at ten.
And protect the second break. The first one will be rough. The second is recoverable if the reset happens and unrecoverable if it does not, per Module 50.

14. What This Does Not Qualify You To Do
Independent education, not accreditation or licensure. The the applicable Texas alcohol regulator is the controlling authority for alcohol service in Texas and state-approved seller-server training is a separate requirement. Occupancy, crowd management, and life-safety requirements are governed by the applicable fire and building authorities.
