The practice
Build the house spirit-forward drink at Tuesday pace and Saturday pace. Refrigerate both. Taste blind the next day.
Then decide the batch list — which drinks get batched on show nights, written down.
Then serve a batched version against a rushed one.
And practice the honest sentence: "a batched Old Fashioned on a sold-out Saturday is better service than a rushed one."

What you are building
The professional response to compression, which is to decide rather than to drift.
Because an undeclared compromise becomes a drift, per Module 40 — a bar that decides its Saturday technique deliberately has a Saturday standard, and one that lets it happen has a mystery.
