1. Technical foundation and vocabulary
A cocktail is a controlled system of strength, sweetness, acidity, bitterness, aroma, temperature, dilution and texture. Technique exists to create a defined sensory result.
Execute complete mixed-drink rounds with consistent measure, temperature, dilution, carbonation, garnish and timing.
Use the written house specification, measured ingredients, defined ice, target temperature and finished yield. Record variance rather than relying on memory.
Design the round, not only the cocktail. A labor-heavy drink that strands five longnecks on the service mat fails the room even when it tastes correct.
Teach-back prompt: The bartender must explain why this task matters, which variable has the largest effect and what evidence separates a correct result from a lucky result.
2. Tools explained—not merely listed
Defines the approved result. It should name quantity, method, endpoint, portion, presentation, hold limit and allowed substitution.
Creates a repeatable liquid measure. Fill to the intended line over a recoverable area and periodically compare the actual volume with a known measure.
Controls presentation, temperature, aroma and safe handling. Inspect for chips, odor, film and heat shock before use.
Supports a defined control point. The learner must know its purpose, operating limit, inspection method, cleaning method and approved storage position.
Acts as food and as a heat-transfer material. Protect it from contamination, wet meltwater and inconsistent size.
Before service, inspect every tool for cleanliness, damage, calibration, correct assembly and a stable home position. A tool is not ready because it is present; it is ready when it can perform its control reliably.
3. Complete operating method

Do not call a correction successful until the next measured result meets the original standard. When the cause is uncertain, reduce variables and compare a fresh control.

- Room transfer. Complete a mixed-order, ticket-wave, guest-interaction or handoff simulation.
- Teach back. Demonstrate the task to another learner and answer “why” questions without relying on the page.

Pass rule: all safety and legal boundaries must be met, and the learner must produce three consecutive acceptable repetitions plus one successful pressure repetition. A trainer records any restriction or follow-up practice.
