This capstone is not passed by reading or checking boxes. The learner must demonstrate the complete work under direct observation, explain the reasons behind each control and repeat any critical step until performance is stable.
Assessment stations
- Explain. Brief the trainer on purpose, hazards, tools and control points before beginning.
- Set up. Inspect, prepare and arrange the station without prompts that conceal missing knowledge.
- Execute. Complete the task at realistic service pace while preserving every critical control.
- Diagnose. Respond to one planted defect, shortage or guest/ticket complication.
- Close the loop. Measure the result, clean and reset, document evidence and explain the next improvement.

Scoring rubric
Accurate, safe, efficient and able to diagnose variation while teaching the reason.
Meets the standard without prompting; minor inefficiency does not affect safety or guest quality.
Needs prompts, loses sequence or cannot consistently recover a defect.
Misses a critical control, creates risk or cannot produce the approved result.
Critical-fail conditions
- Unsafe act or contamination is not corrected.
- The learner cannot explain when to stop and escalate.
- Required measurement or documentation is fabricated or omitted.
- The final product or service repeatedly misses the approved standard.
A critical fail ends that attempt. The trainer isolates the risk, reteaches the specific control and schedules a new observed attempt. It is not averaged away by strengths elsewhere.
Pressure scenario
A mixed round contains four longnecks, two shots, a Ranch Water and a shaken sour as the band returns to stage.
The trainer introduces one realistic complication: a missing item, equipment delay, guest concern, late ticket, staff handoff or quality defect. The bartender must communicate, protect the standard and choose the correct recovery instead of hiding the problem.

Assessment stations
- Cocktail families as a working map: Use sour, highball, old-fashioned, martini, Collins and other structures to learn faster.
- Build order, glass preparation and sequencing: Choose an order that controls temperature, dilution, carbonation and ticket completion.
- Shaking, stirring, building and rolling: Match technique to ingredients, texture, temperature and service speed.
- Juice, syrup and perishable ingredient control: Prepare, label, taste, rotate and discard house ingredients by approved standards.
- Garnish purpose, preparation and sanitation: Use garnish for aroma, identification and presentation without waste or contamination.
- Multiple-ticket organization: Group compatible actions, preserve order accuracy and finish complete rounds together.
- Taking orders in loud rooms: Confirm brands, sizes, tabs, allergies and special requests with concise closed-loop language.
- POS, tabs, cash and payment handoff: Enter accurately, protect cards and cash, reconcile changes and prevent abandoned tabs.
- Remakes, complaints and service recovery: Listen, verify the issue, correct quickly and capture the cause for prevention.
- Run a complete supervised shift: Open, serve, restock, communicate, close and document to the venue standard.
Required service conditions
- A controlled opening or readiness check.
- A mixed-order service simulation with noise and interruption.
- At least one safety, quality or responsible-service decision.
- A recovery scenario involving stock, equipment, guest or communication failure.
- A complete close, count or handoff appropriate to the track.
