Part One: What Phase Seven Actually Has To Do

What already exists

Every expanded module carries a "Where This Connects" section naming its forward links, backward links, and workplace-track destinations in sentences.

Every track lesson and school class states its prerequisites by module number.

Which means the curriculum is already connected. It is connected in one direction.

What is missing

A reader standing at Module 9 knows it feeds the Pit Production Cook track. A reader standing in the middle of the Pit Production Cook track already has the prerequisites listed.

But nobody has told Module 9 which specific lesson applies it, or which diagnostic tests it, or which formula sensory standards depend on it.

And nobody has told a reader looking at a failed brisket where to start.

So Phase Seven produces three things.

A forward index — each module pointing to every place its content is applied, tested, or required.

A symptom index — a reader with a problem in front of them, routed to the module that explains it.

And a mechanism index — the concepts that appear in many places, gathered so a reader can see the whole shape of one idea rather than encountering it six times as a coincidence.

The rule for what gets indexed

Only real dependencies.

A cross-reference that says "see also" is noise. A cross-reference that says "this module's mechanism is what makes that lesson's decision possible" is navigation.

Which means the test for every entry: would a reader who followed this link find something they actually need, or something merely related?


Part Two: The Forward Index

How to read it

Each module lists what applies it. Formula standards it governs. Diagnostics that test it. Track lessons and school classes that use it. And the modules that depend on it downstream.

Where a module is a load-bearing prerequisite — meaning the downstream content genuinely cannot be understood without it — it is marked as such.

Part Three: The Symptom Index

How to use it

A reader has a problem in front of them and does not know which module explains it.

This index routes from the observable to the mechanism. Find the symptom, go to the module, then to the diagnostic that tests it.

Where two symptoms look alike and have opposite fixes, both are listed together with the discriminatorbecause the expensive mistake in this trade is not failing to diagnose, it is diagnosing confidently and wrongly, then changing something.


Kitchen — Product

Gray and wet where it should be browned. Module 23 (crowding) or Module 8 (surface moisture). Discriminator: is there standing liquid in the pan?

Pale and greasy from the fryer. Module 25 — temperature collapse. Distinguish from dark-and-raw, which is oil condition. Discriminator: pale points at temperature, dark points at oil.

Dry and tough at once. Module 9 — under-converted. Distinguish from dry-and-falling-apart, which is over-converted. Discriminator: fork resistance.

Flat biscuits. Module 31 — warm fat or over-working. Discriminator: warm-fat crumbles, over-worked pulls.

Bitter barbecue bark. Module 12 — creosote or sugar burn. Discriminator: creosote is patchy and worst at the fat edge; sugar burn is even and follows the rub.

Sauce thinner after hours on the line. Module 10 — starch breakdown. Not dilution.

Sauce saltier with nothing added. Module 8 — concentration by evaporation and absorption.

Coating sliding off. Module 24 — stacked breaded product.

Cold food bland. Module 30 — seasoned warm, served cold.

Pale bottom, correct top. Module 40 — cold pan. The batter should sizzle.

Tortillas not puffing. Module 39 — masa dried across the shift.

Beans hard past their time. Module 16 — age, salt, acid, or hard water.

Pickles soft. Module 41 — brine specified by volume against a variable vegetable.

Bar — Product

Spirit-forward drinks watery late in the shift. Bar Module 9 — well ice condition.

A sour harsh to spec. Bar Module 12 — the day's citrus. Correct on the sweetening axis.

A drink dull rather than harsh. Bar Module 14 — old juice. Different defect, different fix.

A drink flat with nothing obviously wrong. Bar Modules 14 and 25 — taste the vermouth alone.

Part Four: The Mechanism Index

Why this exists

Some concepts appear in six or eight places across both academies.

A reader who meets them one at a time experiences six coincidences. Gathered, they are one ideaand understanding it once means recognizing it everywhere.


The evaporative pin

A wet surface is held near boiling and cannot brown until the free water is gone.

Kitchen Modules 7, 8, 12, 22, 23, 25, 36.

Appears as: the crowded pan, six sheet pans of potatoes, the steamed steak, and the stall — which is the same mechanism at a scale of hours.

And it makes the brisket wrap a thermal decision rather than a ritual: wrapping stops evaporation, and that is its entire function.


Warm fat stops being discrete

Fat past its working range blends rather than staying as separate particles, and the structure it was supposed to build never forms.

Kitchen Modules 11, 31, 37, 40.

Appears as: the flat biscuit, the greasy pie dough, and the crumbly sausagethree products, one physics, and a daily variable in a Texas kitchen in July.

Diagnostic in all three: probe the material, not the room.


Emulsifier capacity and marginal formation

An emulsion that fails at production was never formed. One that fails hours later was formed marginally.

Kitchen Modules 11, 15, 19, 20, 37. Bar Modules 41.

Appears as: the doubled ranch batch, the cheese sauce after a vendor change, the Sunday hollandaise, and the sausage's protein matrix.

The timing of the failure is the discriminator.


Concentration on a hold

Volume falls, dissolved solids concentrate, and in anything with solids the free liquid phase shrinks faster than the total.

Kitchen Modules 8, 18, 19, 45.

Appears as: chili too salty at nine, the pan sauce built twice, the gravy that got saltier.

Which is why chili does it more reliably than a broth.


Starch breaks down under heat and shear

The opposite of what intuition predicts on a hold line.

Kitchen Modules 10, 19, 45.

Appears as: the gravy thinner at hour three with no dilution — and the correction trap, where stirring to prevent skinning is the thing thinning it.


Time at temperature, not a threshold

Collagen conversion, pasteurization, and extraction all work this way.

Kitchen Modules 9, 29, 36, 28. Bar Modules 14, 45.

Appears as: the brisket pulled on a number, the sous vide program with no validated duration, and the infusion procedure that specified a duration rather than a taste.


Ice is an ingredient that changes across a shift

Bar Modules 9, 10, 35, 38, 39, 43.

Appears as: the Old Fashioned watery at eleven, the count that is wrong in both directions, and the ranch water flat at the dance floor.


Oxidation as a subtraction

Nothing is present that should not be. Something is missing — and missing is far harder to detect than present.

Bar Modules 14, 25, 28, 30, 36.

Appears as: vermouth, wine, and hop-forward beer — all three producing no complaints and a quiet decline in orders.


Velocity against format

The arithmetic this curriculum keeps arriving at from every direction.

Bar Modules 25, 28, 30, 55, 57. Kitchen Modules 16, 48.

Appears as: four Manhattans a week and a large vermouth. Four glasses of wine a week and a full bottle. A keg a month of an IPA. A single-use ingredient in a low-velocity dish.

In a room that sells whiskey and beer, low volume is the hazard rather than high volume.


Calibration drift and the reference

Everyone in a building is calibrated against yesterday, so the accumulated change is invisible from inside.

Kitchen Modules 6, 50. Bar Modules 15, 30, 32, 56.

Appears as: the kitchen that cannot find what the regulars noticed, the beer lines nobody tasted, and four bartenders each building to a private standard.

One solution in all cases: an external reference.


The location of a variance is its diagnosis

Kitchen Modules 46, 52. Bar Modules 5, 53.

Appears as: variance isolated to well spirits, waste concentrated in three ingredients, and food cost rising while purchase prices fall.

And the ordering rule that follows: mechanical explanations first, suspicion last.


The constraint, and adding people to it

Kitchen Modules 4, 43. Bar Modules 48, 50.

Appears as: ticket times worse after adding a cook, the fryer that routes a third of the menu, and the bar that collapses at the second break.

The diagnostic: if adding a person made it slower, the person was not at the constraint.


Acoustics as an engineering constraint

Kitchen Modules 44, 51. Bar Modules 1, 7, 8, 52.

Appears as: the modification lost in transit, the three people who noticed and said nothing, and the refusal communicated to the wrong position.

Framing it as acoustics rather than diligence is what makes the written rule survive a loud night.


The self-reinforcing correction

Three in the curriculum, and all three leave a written record.

Fryer set point raised for degraded oil — Kitchen Module 25. Gas pressure raised to fix foam — Bar Module 31. Pit intake closed to hold temperature — Kitchen Modules 12, 36.

In each case the correction accelerates the cause, and the crept setting is the record of every previous misdiagnosis.


Exposure is not training

Kitchen Modules 50, 53. Bar Modules 15, 56. Every Phase Six track and school.

Appears as: quality dropping on known days, four bartenders following one spec, and the expert who cannot enumerate what they know.

The extraction method — decision points rather than actions — is the foundation of all of Phase Six.


The boundary as teaching

Kitchen Modules 29, 51. Bar Modules 7, 44, 52.

Appears as: the kitchen that cannot guarantee an allergen-free fried item, the refusal with no departure plan, the sous vide program with no approved process, and the frozen machine with no sensory warning.

In all of them the professional answer is an honest statement of what cannot be doneand a boundary learned from a footnote will not hold on a Saturday.
