And the timing is cruel: the busiest kitchen periods coincide exactly with the periods when communication is hardest. The set break is when the orders arrive, and it is bracketed by the sets when nobody can hear.

The stakes range from a cold vegetable to the highest-consequence failure in the entire curriculum, which is an allergen modification that dropped in transit.

3. The Mechanism

Sequencing by duration

Items on a plate cook at different rates. They have to be fired in reverse order of duration so they finish together.

Longest first. Shortest last.

Firing in the order the ticket lists them — which is the order the guest said them — guarantees that something waits.

And the component that shows the wait is the one with the least thermal mass. A small portion of vegetable loses heat far faster than a protein or a starch, so it registers the wait even when the wait is short.

That means the vegetable is the indicator, not the problem. Everything else on the plate waited too; it just did not show.

The quality gate

The pass is the last point where a defect can be caught, and it is a two-second look.
