Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.
Method
Bring the queso base to service viscosity before adding meat; cold brisket should never be used to cool the entire batch through the holding zone.
Fold in hot diced brisket and salsa gently so rendered beef fat is dispersed rather than aggressively emulsified into the cheese.
Add poblano and jalapeño, then check salt only after the seasoned brisket and salsa are fully incorporated.
Adjust final viscosity with the house queso method, not with uncontrolled milk additions that change both yield and seasoning.
Finish lime/scallion close to service, weigh the batch to 8 kg and portion with a standard ladle.

Sensory standard
Creamy cheese with distinct smoky beef pieces, roasted chile and enough acidity to keep the finish from becoming heavy.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
