Method
Combine dry ingredients uniformly; cut cold butter into flour leaving visible flattened pieces rather than homogeneous paste.
Add cold buttermilk and mix only until the dough comes together with dry pockets nearly gone.
Fold/laminate a limited number of times to create layers while avoiding excessive gluten development.
Roll to documented thickness and cut straight down with a sharp cutter; do not twist and seal the edges.
Bake in a fully preheated oven until tall, deeply golden and cooked through; weigh bake loss and serve promptly.
