Method
Trim tendons/irregular edges enough for consistent bite and cook time; portion servings by weight.
Season chicken and lightly coat with buttermilk; drain before dredging in flour/cornstarch blend.
Press dredge to form a textured crust, then rest briefly while fryer recovers.
Fry in small batches until crust is crisp and poultry reaches applicable safe endpoint without drying the narrow tenderloin.
Drain on racks, season immediately and sell with measured sauce portions.

Sensory standard
Crisp light crust, juicy tender chicken, fully seasoned, no tendon chew or greasy breading.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
