Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Bring measured water/milk to a simmer and whisk in grits in a steady rain to prevent dry pockets.

  2. Reduce heat and cook with regular bottom scraping until the particles are fully hydrated and no raw gritty center remains.

  3. Add hot liquid in measured increments only if the grain requires more hydration; document lot-specific demand rather than guessing every batch.

  4. Off aggressive heat, fold in cheese and butter so fat stays emulsified instead of boiling out.

  5. Weigh to 8 kg, adjust service viscosity with hot milk/water if required and record hold-time thickening at 15-minute intervals.
