Method
Bring measured water/milk to a simmer and whisk in grits in a steady rain to prevent dry pockets.
Reduce heat and cook with regular bottom scraping until the particles are fully hydrated and no raw gritty center remains.
Add hot liquid in measured increments only if the grain requires more hydration; document lot-specific demand rather than guessing every batch.
Off aggressive heat, fold in cheese and butter so fat stays emulsified instead of boiling out.
Weigh to 8 kg, adjust service viscosity with hot milk/water if required and record hold-time thickening at 15-minute intervals.

Sensory standard
Creamy but grain-identifiable texture, cooked corn aroma, integrated cheddar and butter with no scorched bottom or oily break.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
