Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Cook and chill eggs with a method that sets yolks without a strong green sulfur ring, then peel carefully.

  2. Halve lengthwise and remove yolks without tearing whites; weigh usable whites/yolks if yield control is important.

  3. Pass yolks through a fine screen or mash until smooth, then mix with measured mayonnaise, mustard, brine, salt and pepper.

  4. Adjust filling to a pipeable but stable texture; over-thinning makes the halves slump during holding.

  5. Pipe by weight into whites, garnish uniformly and chill promptly until service.
