Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Cut vegetables to a uniform size based on density so the final batch reaches a similar bite after refrigerated marination.

  2. Bring vinegar, water, sugar, salt and spices just to a boil to dissolve solids and extract spice aroma; do not reduce the measured brine.

  3. Pack vegetables in clean food-safe containers with enough headspace for brine circulation, then cover completely with the measured hot or cooled brine according to the house texture target.

  4. Cool under the approved cooling plan before sealing for refrigerated storage; label production date and intended refrigerated use.

  5. Evaluate texture, salt and acid after the defined maturation period and adjust future cut size/brine—not the current batch by uncontrolled dilution.

Sensory standard

Bright acid, crisp-tender vegetables, clean spice extraction and enough salt/sugar to round the vinegar without masking vegetable identity.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
