Method

  1. Square/trim racks to the intended service cut; remove loose fat and membrane according to house standard, recording trim yield.

  2. Season by weight and establish a clean stable fire before loading.

  3. Smoke with enough airflow to set bark and render fat; rotate only when pit profile requires it.

  4. Judge tenderness by bend/bone resistance and bite rather than cooking until meat collapses from the bone.

  5. Rest, cut cleanly between bones, weigh finished yield and sauce only if the menu style calls for it.

Sensory standard

Set bark, rendered fat, moist pork, rib pulls cleanly with a bite but retains structure; clean smoke.
