The sequence
Load hot food hot and cold food cold.
Probe before loading.
Probe on arrival.
Record both.
And plan the route's duration.
The decisions
Whether the transport can hold temperature. This is the lesson and it is the highest-risk part of the track.
Product in transit is in a holding environment nobody is monitoring, and the time counts toward cumulative exposure, per Module 2.
Which means the probe happens at both ends and the interval is recorded — because a plan that assumes a thirty-minute drive and gets ninety has a problem nobody logged.
And whether to transport at all. Sometimes the honest answer is that the product should be finished on site or not offered.
