The sequence
Shallow containers.
Reduce the distance heat has to travel.
Probe the geometric center at every checkpoint.
Record it.
The decisions
Container depth. The governing variable, per Module 2 — because cooling rate is set by the distance heat has to travel to a surface, and food conducts poorly.
A deep container has an interior that stays warm for hours regardless of the walk-in's air temperature.
Whether to use an intervention. Ice bath, ice paddle, ice as an ingredient, smaller volumes — all of them work by the same principle.
And where to probe. The geometric center. A surface reading is real and it answers a different question.
What you are reading
Nothing sensory. There is nothing to see.
The probe, at the center, at the required checkpoints.
And the container itself, which is visible from across the kitchen.
What goes wrong here
Cooled in depth. No sensory sign whatsoever — the most serious failure in this track.
Probed at the surface. A correct log documenting a failure, per Module 2's worked example.
And cooled at close by someone tired.
Verification
Probe both surface and center for one week and record both. The gap is the finding and it usually finds a failure nobody knew about.
The boundary
Every cooling window, temperature, and method is set by the local health authority and its requirements govern absolutely.
