The sequence
Reheat on a burner or in an oven, probed.
Hold at temperature, measured rather than assumed.
Tape the time on the container.
And check the cabinet rather than the dial.
The decisions
Reheat or hold. Different requirements for different purposes and satisfying one does not satisfy the other, per Module 2.
A steam table holds. It does not reheat. Product brought from cold to serving temperature on a steam table passes slowly through the entire growth range and may never reach the reheat requirement — and it reads correct on the line all evening because the line log is answering the holding question.
Whether to trust the equipment's display. No. Probe the product.
And whether cumulative time has been tracked. Time accumulates across a product's entire life and no single person sees all of it — which is why the tracking has to travel with the product.

Verification
Watch how product actually gets brought up to service temperature. If it happens on the steam table, that is the finding.
And pick a container mid-service and reconstruct its history.
