Lesson 9 — Building the Controls Into the Work

Part of the Food Safety Control track. Lesson 9 of 10.

Where in the shift: in the design of the shift.

Prerequisites: Modules 2, 45, 53.

The sequence

Make the control part of the task rather than a separate step.

Put the tools where the work happens.

And name the owner.

The decisions

Where the tape lives. On the bench where product gets panned, or it will not get used.

Where the probe lives.

And whether the control survives a busy night. A control that requires walking somewhere will be skipped, which means the design decision is upstream of the discipline.

Which is the same finding as Module 2's: a rule without a mechanism gets dropped when the rail is deepand a rule with an inconvenient tool gets dropped even faster.

What you are reading

Whether the controls are actually happening on the busiest night, not on a quiet one.

What goes wrong here

Controls designed for a quiet kitchen.

Tools stored away from the work.

Verification

Observe on a Saturday, not on a Tuesday.

The boundary

The local health authority's requirements govern.
