The sequence
Taste on a schedule, not when something seems wrong.
Correct once.
Remake rather than correct twice.
And eighty-six rather than serve something the room should not be proud of.
The decisions
Correct or remake. The test: if you cannot say what the product originally was, it is past correction, per Module 45.
Roughly one correction for a roux-thickened sauce or a queso. A third rescue produces something further from standard than the original defect.
Whether to serve a compromised item. A real decision and it should be made rather than defaulted into.
A flat that came out tight can be sliced thinner and served with that said at pre-shift — or it can come off. Both are defensible. Pretending it is fine is not.
And whether a guest complaint is a pattern. A dish that comes back twice in a night is information rather than bad luck.

Verification
Pick a held container mid-service and reconstruct its history from the tape.
And track plate returns by dish for a week.
The boundary
Discard decisions with a safety dimension are governed by the local health authority and its requirements override any quality judgment.
