Part of the Kitchen Lead track. Lesson 10 of 10.
Where in the shift: the end.
Prerequisites: Modules 2, 45, 52, 53.
The sequence
Walk the cooling.
Check the labeling.
Record what happened.
And write what the next shift needs to know.
The decisions
What to record. What ran out, what was substituted, what was corrected, what held long, and what broke.
Because the next shift will discover all of it anyway — the question is whether they discover it from a note or from a failure.
And whether the cooling is right. The decision made at midnight by someone who wants to go home, per Module 2 — shallow containers, probed at the center, and it has no sensory warning.
Which is why it is the lead's job rather than the closer's judgment.
What you are reading
Container depth. Visible from across the kitchen.
Center probes, not surface readings.
And undated containers.
What goes wrong here
Cooled in depth at close.
Nothing recorded. The next shift finds out by failing.
And the close treated as cleaning rather than as a handoff.
Verification
Pick five containers at random. Any undated one is the finding.
And ask the next shift what they were told.
The boundary
Cooling windows, temperatures, and methods are governed by the local health authority and its requirements override anything here.
