Where in the shift: before service, and it determines the whole night.

The sequence
Check the equipment — temperatures, fryer oil condition, pilot lights, and anything that has been repaired.
Set up by frequency of use, not by category.
Stock to the night's expected volume, not to a standard.
Measure the fryer's recovery if you have not.
And check the par levels against what prep left you.
The decisions
What goes inside the working arc. Everything used most, and everything else can cost a step, per Module 43.
In a station built by accretion the high-frequency items are rarely where they should be, and moving them is free.
How much to stock. Setup is a forecasting exercise, per Module 42 — a station set up for a Tuesday cannot be fast on a Saturday regardless of who is working.
And whether the equipment is right. Probe the fryer. Check the oil. A fryer that has been running since open with degraded oil will brown fast and cook slow, per Module 25, and it is better to know at five.
What you are reading
The oil. Dark, viscous, foaming when product goes in, acrid rather than clean.
The equipment's actual temperatures, not the dials.
And the station's geometry — how many steps a normal ticket requires.
What goes wrong here
Set up to a standard rather than to the night.
Tools outside the arc, which costs steps all night and is invisible.
And the fryer's condition not checked — which produces the twenty-minutes-after-the-break failure with no warning.
Verification
Count steps on ten tickets. The number is the finding, per Module 43.
And the fryer's recovery number, written on the fryer.
