Lesson 5 — Plating and the Pass

Where in the shift: every ticket.

Prerequisites: Modules 7, 44, 45.

The sequence

Fire by duration, longest first.

Plate hot components last.

Check the plate.

Call it.

And get it gone.

The decisions

Firing order. By duration, not by ticket order, per Module 44 — so everything lands together.

Firing in the order the guest said them guarantees something waits.

Whether to hold for a straggler. A judgment, and the answer depends on how long. The whole plate degrades while one component finishes, and sometimes re-firing the fast component is better than holding the slow one.

And whether to send it. The quality gate is a two-second look and it is the first thing dropped when the rail is deepwhich is exactly when the defect rate rises.

What you are reading

Component temperatures. The vegetable is the indicator — it has the least thermal mass and it registers a wait the other components absorb, per Module 44.

And the plate itself — clean rim, correct portions, modification present.

What goes wrong here

Fired in ticket order. One component consistently cold and it is always the same one.

The gate skipped.

And the modification not confirmedwhich on an allergen ticket is the highest-consequence failure in this curriculum.

Verification

Touch each component on ten plates and note which is cooler.

And watch whether the two-second look happens at nine.

The boundary

Allergen communication and control are governed by the local health authority and by applicable law, per Module 51.
