Why pit cooks use Peach
Peach is a delicate fruitwood with a softer floral-smoke character. It can disappear under heavy seasoning or become inefficient when asked to carry a large pit alone.

The profile often described as soft, fruity, floral smoke is not produced by species alone. Moisture, bark, split size, density, pit draft, fire temperature, food load, grease, weather, and the amount of wood used all change the result.
How it behaves in the fire
Peach should be judged by ignition time, flame stability, coal production, ash, recovery after a new split, and the odor of the exhaust—not by the name on the stack. Dense splits generally last longer but demand a stronger coal bed; smaller splits ignite faster and produce quicker temperature changes.
Moisture consumes heat before the wood can burn efficiently. EPA wood-burning guidance—although written for heating appliances rather than barbecue—similarly emphasizes dry wood, adequate airflow, and a hot efficient fire to reduce smoke. Use that principle while following the pit manufacturer, fire authority, and venue procedure.
Flavor, pairings, and blending
Common pairings include poultry, pork, fish, vegetables, desserts. These are starting points, not rules. A pepper-heavy brisket, sweet pork glaze, delicate turkey breast, oily sausage, or smoked dessert responds differently to the same fire.
Run a controlled test: keep meat source, rub, pit load, cook temperature, wrap, and holding constant; change only the wood or blend. Compare aroma, bark, bitterness, aftertaste, and how the food tastes after holding—not only directly off the pit.
Receiving specification
- Positive species identification: Peach; record supplier and region (Texas orchards and cooking-wood suppliers where relevant).
- Untreated, unpainted, unglued, uncontaminated cooking wood only.
- Split dimensions and approximate weight suited to the cooker.
- No visible mold, rot, petroleum odor, pesticide concern, saltwater contamination, or construction debris.
- Moisture-check method and sample locations documented.
- Delivery date, quantity, rejects, and storage location recorded.
Common mistakes
- Loading several cold splits because the pit temperature is falling instead of rebuilding clean combustion.
- Restricting exhaust and trapping stale smoke.
- Changing wood species, moisture, and split size at the same time, making the result impossible to diagnose.
- Using a strong wood to compensate for weak seasoning or poor bark.
- Accepting local or free wood without species and contamination history.
- Judging the fire only by a thermometer and not by flames, coals, smoke, odor, and recovery.
Storage and rotation
Store wood off soil and standing water with airflow around the stack and weather protection over the top. A fully wrapped stack can trap moisture. Separate species and delivery lots so staff can identify what entered the fire.
Use first-in, first-out rotation, but do not assume age alone proves the wood is ready. Recheck after rain, long humidity, pest activity, or movement to a different storage area.
