1. The Controlling Idea
Technique is chosen from what the drink requires, not from habit — and every technique is a different combination of dilution, aeration, and texture.
2. Why This Matters in the Room
Cloudy Negronis. Flat, closed sours. Drinks that are correct on a Tuesday and different on Saturday from the same bartender. A house drink that three people make three ways because nobody ever said which method the spec assumes.
Technique is the least specified part of most bar programs. A spec lists ingredients and quantities and says nothing about how they are combined — which means the largest single variable in the finished drink is left to whoever is working.
And under pressure, technique is the first thing that changes. That is a real and honest trade. The failure is not that it happens. The failure is pretending it did not.
3. The Mechanism
What each technique actually does
Every method is a different point on three axes: dilution, aeration, and temperature.
Stirring. Moderate dilution delivered slowly, no aeration, full chill. Produces a clear, dense, weighty drink. The method for anything that is only spirit and modifier.
Shaking. High dilution delivered fast, substantial aeration, hard chill, and ice fragments in the drink unless fine-strained. Produces a cold, lightly frothy, lifted drink. The method for anything with citrus, dairy, egg, or fruit purée.
Building. Minimal additional dilution beyond what the ice in the glass provides over time. No aeration. The method for highballs and anything carbonated, where the goal is to disturb the drink as little as possible.
Rolling. Pouring back and forth between vessels. Moderate aeration without the violence of a shake, moderate dilution. Useful where a drink needs integration and lift but not a full shake — a Bloody Mary is the classic case, because shaking it aerates the tomato into something frothy and wrong.
Throwing. Pouring from height between vessels, repeatedly. High aeration with relatively low dilution, and it produces a distinctive silky texture. Slow, dramatic, and genuinely different from a shake.
Swizzling. A swizzle stick worked in crushed ice in the glass. Chills fast, dilutes progressively, and builds a frost on the outside of the vessel. The method for crushed-ice drinks where the dilution is designed to continue across the drinking.
Whip shake. A short hard shake with a small amount of crushed ice, so the ice fully disintegrates. Aerates and chills with controlled dilution, then the drink goes over fresh crushed ice. Used for tiki and crushed-ice builds.
Dry shake. No ice, to build protein structure before dilution. Not a technique on its own — a preparatory stage for anything with egg or aquafaba.
The decision rule
If it contains citrus, dairy, egg, or fruit purée, shake it. If it does not, stir it.
That single rule covers most of the canon and it is a rule about ingredients rather than about tradition. The reason is mechanical: those ingredients benefit from aeration — texture, lift, integration — and the cloudiness that comes with it is expected in that family. A spirit-and-modifier drink has nothing to gain from aeration and everything to lose: clarity, density, and the absence of ice fragments that keep diluting in the glass.
The other techniques are refinements applied where the drink has a specific requirement the two main methods do not meet.
Ice fragments and fine-straining
Shaking chips ice. Those fragments go into the glass unless the drink is double-strained, and they continue melting after service.
A shaken drink keeps diluting on the way to the table in a way a stirred one does not. In a bar where the guest drinks at the rail that is a minor effect. In a dancehall where the guest carries the drink a hundred feet to a dance floor, it is not.
Fine-straining matters more in this room than in most, and it is worth saying why rather than presenting it as fussiness.
Technique under volume
Here is the honest part.
At a set break, stirs get shorter and shakes get briefer. That is what happens and no amount of instruction prevents it, because a bartender facing three hundred people will find the time somewhere.
The result is a real quality change, and a bar that does not acknowledge it will have a drink that is correct on Tuesday and different on Saturday, with everyone insisting nothing changed.
The professional response is to decide in advance what flexes and to batch what cannot survive the compression. A pre-diluted spirit-forward drink poured over a cube is better than a rushed stir. A pre-batched sour base that only needs a shake with ice is better than building from scratch.
That is a planning decision made on Thursday, and it converts an invisible quality loss into a controlled trade.
4. The Variables You Control
Set directly: technique, duration, intensity, ice format and quantity, whether to fine-strain, what gets batched.
Influenced indirectly: dilution and aeration together, since every technique moves both.
Observed and responded to: the drink's composition, which determines the requirement; the night's pace, which determines what is achievable.
5. The Numbers
Stirring delivers roughly a quarter dilution to a spirit-forward drink, slowly, with no aeration.
Shaking delivers more dilution, faster, with aeration and fragments.
Building adds almost nothing beyond the glass ice.
The endpoint for a shake is a fully frosted tin. For a stir it is taste, with the mixing glass frost as a mid-point signal rather than a finish.
6. The Sensory Standard
A correctly stirred drink. Brilliantly clear, dense, slightly viscous-looking when tilted. Reads as one integrated thing.
A correctly shaken sour. Cold, hazy, with a thin foam settling to a ring within about thirty seconds. The citrus lifted rather than sharp, and the texture lightly frothy.
A correctly built highball. Full ice, active fine bead, cold from the first sip, minimal disturbance visible.
A correctly thrown drink. Silky, integrated, aerated without the frothiness of a shake, and clear.
What almost-right presents as
A stirred drink that got a brief shake by mistake. Slightly hazy rather than brilliant, and the texture is a shade thinner. Most guests will not name it and the drink is measurably worse.
A shaken drink that was not fine-strained. Correct at the pass, and noticeably more dilute three minutes later at a table. The failure lands after the bartender has stopped watching.
A shake stopped just short. The tin is cold and not fully frosted. The drink reads slightly sharp and slightly separate — the citrus and the spirit have not become one thing.
What each failure presents as
Shaken by default: cloudy, thin, over-aerated spirit-forward drinks with fragments in the glass.
Stirred when it needed shaking: flat texture, closed aroma, citrus reading sharp rather than lifted.
Dry shake skipped: thin foam collapsing within thirty seconds.
Over-shaken: thin, watery, coarse foam, muted citrus.
Technique compressed silently: the same drink different on Saturday from Tuesday, with nobody able to say what changed.
7. The Worked Example
A drink correct at a slow bar and wrong on Saturday, worked through.
The complaint. The house Manhattan is excellent on a Tuesday and inconsistent on Saturday. Same bartender works both. Same spec, same bottles, same glassware.
First: is it the ice? Module 9's failure produces exactly this pattern and it is the leading candidate. I check the well and draw a comparison from the machine. Some contribution, not the whole story — the Tuesday and Saturday difference is larger than ice condition alone explains.
Second: what is the bartender actually doing differently? I watch rather than ask.
On Tuesday the stir runs long and unhurried. On Saturday it is roughly half as long and the bartender is doing three other things while it happens.
That is the answer and it is not a criticism. A bartender with three hundred people at a rail will find the time somewhere and the stir is the most compressible thing in the build. Telling them to stir longer produces either slower service or a promise nobody can keep.
Third: what does the compressed stir actually cost? Under-dilution — hot, thin, short. Which is exactly what the Saturday drinks read like when I taste them side by side against a Tuesday build.
The fix, and it is a planning decision.
Batch the Manhattan. Pre-diluted to the target, pre-chilled, poured over a cube with a cherry. It takes eight seconds to serve, it is correct every time, and it is better than a rushed stir by a wide margin.
Decide which drinks get this treatment before the night rather than during it. In this room that is the Manhattan, the Old Fashioned, and the margarita — the three highest-volume builds where compression does the most damage.
And say out loud what the trade is. A batched Manhattan gives up the small amount of variation a fresh stir provides and gains consistency and speed. That is a defensible trade and it should be made deliberately, in a pre-shift, rather than discovered by a guest.
What I would do differently. Nothing about the bartender. The failure was that nobody had ever decided what happens to technique at volume, so it was decided by default, in the moment, by the person with the least room to decide anything.

10. Volume Pressure
This module is about volume pressure, so the section is the point rather than a coda.
What can flex: which technique gets used, if the decision is made in advance and compensated with batching.
What cannot: the physics of what each technique delivers. A short stir under-dilutes at any volume. A skipped dry shake produces no foam at any volume.
And the governing principle: an undeclared compromise becomes a drift. A bar that decides its Saturday technique deliberately has a Saturday standard. A bar that lets it happen has a Saturday problem and a mystery.
11. The Diagnostic
Full scenario in the Phase Three document. A drink correct at a slow bar and wrong on Saturday, same bartender, same spec. The answer is technique compression, and the fix is a batching decision made in advance rather than a request for more care.
12. The Practice Protocol
Exercise one: shake versus stir, both ways. Make the same spirit-only drink both ways and the same citrus drink both ways. Look at all four and taste all four. Two minutes, and the rule stops being a rule.
Exercise two: the fine-strain test. Shake a drink, pour half fine-strained and half not, and taste both at three minutes.
Exercise three: the compression comparison. Build the house spirit-forward drink at your Tuesday pace and at your Saturday pace. Refrigerate both and taste them blind the next day. This measures your own compression rather than theorizing about it.
Exercise four: throw one. Learn the technique on a Bloody Mary or a sherry drink and taste it against a shaken and a stirred version. You are learning what aeration without violence actually produces.
Exercise five: decide the batch list. Sit down with the menu and decide which drinks get batched on show nights. Write it down. That is the module's actual deliverable.
What to expect. Exercise three is uncomfortable and it is the one that changes behavior.
What this cannot teach. The feel of a tin at full frost or a mixing glass at the right point. Hands, and repetition.
13. Where This Connects

Techniques involving raw egg require the venue's consumer advisory and are governed by the local health authority. state-approved seller-server training remains a separate requirement and the the applicable Texas alcohol regulator is the controlling authority for alcohol service in Texas.
