Which is the honest framing: this module is not core to a room that sells whiskey and beer, and a bar that wants one or two things nobody else nearby makes will find them here.
The failure that matters is a service failure rather than a technique one. A foam that collapses before the guest gets it — correct at the pass and gone by the time it reaches a table across a dance floor.
3. The Mechanism
Foam and protein structure
A stable foam requires a surfactant that can unfold at the air-liquid interface and build a network.
Egg white protein does this well. Mechanical shear unfolds the proteins, which then link at the bubble surfaces and hold the structure.
And the dry shake exists because of a temperature constraint. Cold slows protein denaturation. Shaking with ice from the start chills the mixture before the proteins can unfold and network — which produces a coarse, large-bubbled foam that collapses within thirty seconds.
So: dry shake hard first, then shake with ice. The first stage builds the structure; the second chills and dilutes.
Aquafaba functions similarly through its own proteins and starches, producing a somewhat less stable foam. A real option rather than a compromise, and it matters for guests who will not consume raw egg.
Clarification
Removing suspended particulate to produce a transparent liquid, which changes texture as well as appearance.
Milk clarification uses milk protein to bind tannins and particulate, which then separates out — and it removes astringency along with cloudiness, which is why a clarified drink reads silkier rather than merely clearer.
Agar or gelatin clarification traps particulate in a gel matrix that is then strained or thawed.
Either way the point is textural. A clarified drink has a different mouthfeel, and it also holds carbonation better because there are fewer nucleation sites, per Module 13 — which is why clarification and draft cocktails go together.
Fat-washing
Fat is added to a spirit, allowed to infuse, then frozen and removed.
The mechanism: fat-soluble flavor compounds transfer into the fat and back into the spirit, while the fat itself is removed by freezing and straining.
What is left is flavor and a subtle textural weight without the fat's greasiness.
The failure is incomplete removal. Fat left in the spirit produces a greasy mouthfeel and it goes rancid — which is a shelf-life problem as well as a texture one.
Freeze hard and strain through fine filtration, and taste for greasiness before committing the batch.
Carbonation of cocktails
Covered in Module 44 — and the textural point belongs here: carbonation is a texture, not just a sensation. It changes perceived body, aroma delivery, and finish length.
Where these fit and where they do not
They fit on a small number of signature drinks where the room wants something distinctive and the margin supports the labor.
They do not fit on a volume item at a set break, and a bar that puts a foam drink in its top three sellers has created a problem for itself.

4. The Variables You Control
Set directly: dry shake duration and vigor, clarification method, fat removal thoroughness, which drinks carry these techniques, whether they appear on a high-volume menu position.
Observed and responded to: foam stability at the table rather than at the pass.

6. The Sensory Standard
A correct egg-white foam. Dense, white, fine-bubbled, standing a quarter of the way down the glass and holding. It should hold a bitters pattern until the drink reaches the table. Silky on entry, with the texture outlasting the flavor.
A correct clarified drink. Transparent, silky, with less astringency than the unclarified version and noticeably better carbonation retention if it is carbonated.
A correct fat-washed spirit. The fat's flavor present, a subtle weight on the palate, and no greasiness at all — no film on the lips and no coating.
What almost-right presents as
A foam that will not last the walk. It looks correct at the pass — dense and standing — and it has coarse bubbles visible at the edge. Thirty seconds and the pattern will have sunk. The dry shake was short.
A fat-washed spirit with a trace of fat remaining. The flavor is right and there is the faintest film on the lips. It will go rancid on a shorter clock than expected.
What each failure presents as

Espresso Martini
Target: rich, roasty, sweet-bitter.
Appearance. Dark brown body with a distinct pale crema cap that stands and holds for the length of the service. The crema is the visual signature and its absence is the defect. Three coffee beans if the house does that; the beans are not what makes it correct.
Aroma. Coffee first and forward — roast, not burnt. Coffee liqueur's sweetness underneath. The vodka should be nearly undetectable on the nose.
Palate and finish. Rich and slightly viscous. Coffee bitterness leading, sweetness arriving underneath, alcohol carried rather than prominent. The finish is roasty and moderately long with a bitter tail. Should read as a coffee drink that happens to contain alcohol.
At the edges. More liqueur: sweeter, rounder, the coffee bitterness softened. Less: drier and more bitter with the espresso's own acidity showing. The coffee's own age matters here as much as the ratio — espresso pulled twenty minutes ago has a different acid profile than espresso pulled now.
Out of standard. No crema, flat brown surface — under-shaken, or coffee that sat too long before it went in the tin. Crema comes from shaking fresh coffee hard; there is no other route. Bitter and ashy with an acrid finish — over-extracted espresso, or beans past their window. Thin and watery with a weak coffee note — coffee brewed too light for the build, or excessive dilution. Sweet with the coffee reading as flavoring rather than as the drink — liqueur ratio too high, or the espresso is under-strength.
Pisco Sour
Target: tart, foamy, aromatic.
Appearance. Pale ivory with a dense white foam cap holding a substantial layer, and bitters dropped and drawn across the surface per house spec. The foam should be tight and stable enough to hold the bitters pattern intact until it reaches the guest. A pattern that has sunk means the foam was not built.
Aroma. Aromatic bitters from the surface first — they sit directly under the nose. Then lime, then pisco's grape and floral character.
Palate and finish. Silky on entry from the protein. Tart through the middle. Pisco's floral grape character on the back. The finish is tart, clean, and moderately long, with the texture outlasting the flavor.
At the edges. More sugar rounds it and thickens the foam slightly; less sharpens it and exposes the pisco. The pisco style — the grape variety — moves the aromatics considerably.
Out of standard. Thin foam that will not hold the bitters — dry shake skipped or too short. The single most common defect. Coarse, large-bubbled foam collapsing quickly — shaken with ice from the start. A wet-cardboard or faintly sulfurous note — the egg is not fresh. Flat and sour with no aromatic lift — bitters omitted or applied under the foam rather than on it.
7. The Worked Example
A foam that collapses before the guest gets it.
The situation. The drink looks correct at the pass — dense white foam, bitters pattern floated on top. By the time it reaches a table across the room the pattern has sunk and the foam is a thin ring.
The foam was built and it was built badly, and there is one mechanism.
The dry shake was skipped or too short.
Egg white protein needs mechanical shear to unfold and build a network at the bubble surfaces. That network is what holds the structure.
And cold slows protein denaturation — which means shaking with ice from the start chills the mixture before the proteins can do their work. The result is a foam made of large coarse bubbles with no protein network holding them, and large bubbles coalesce fast.
So it looks correct for thirty seconds and then it is gone.
The check: look at the bubble size at the pass. A correctly built foam is fine and tight. A poorly built one has visible larger bubbles at the edge — and that is visible before the drink leaves the bar.
The fix: dry shake hard, without ice, then shake with ice. The first stage builds the structure; the second chills and dilutes.
And "hard" matters — a gentle dry shake does not deliver enough shear.
Two things to check alongside.
The egg's freshness and temperature. Older egg white has weakened protein structure. And very cold egg white unfolds less readily — which argues for taking it out of refrigeration shortly before use, within whatever the local health authority permits.
And the fine strain. Ice fragments in the drink disrupt the foam from below.
The room-specific note, and it is the reason this failure matters here. In a dancehall the guest is frequently a hundred feet away, which is ninety seconds of travel through a crowd.
A foam that holds for thirty seconds is adequate at a cocktail bar and inadequate here. Which means the standard for this room is stricter than the standard in the literature — the foam has to survive the walk, and testing it at the pass is testing it in the wrong place.
Test it by carrying one to the far end of the room and looking at it there.
What I rule out. The spirit and the citrus, which do not build the foam. And the shake with ice, which is doing its job — the failure is in the stage before it.

Undocumented and unreproducible Signature. A signature technique that only one person can execute. Cause. Not written down at the level of detail that makes it reproducible. Decision. Systems. 12. The Practice Protocol
Exercise one: build two egg sours, one with a proper dry shake and one shaken with ice throughout. Look at both at thirty seconds and at two minutes.
