Class 6 — Running a Calibration

Part of the Flavor and Sensory school. Class 6 of 6.


The capability: you can run a session that leaves a bar with a shared standard.

Prerequisites: the whole school, plus Modules 15, 56.

The practice

Build the reference to the written spec, with dilution, rim, ice, and glass all decided.

Everyone tastes it at once.

Everyone builds one.

Taste all of them blind alongside the reference, in a fixed order, with a duplicate inserted.

Name the differences aloud.

Then rewrite the spec to include what it was missing.

And run it again in a month.

The reference

The reference build itself, which is the point of the session — it converts a standard from several private memories into one shared experience.

What you are building

The ability to produce agreement, which is a facilitation skill as much as a sensory one.

And the understanding of why it works: two people comparing memories cannot converge. Two people comparing to a reference can, in ninety seconds, per Module 15.

Verification and boundary

The blind spread, before and after. A narrowing spread is the verification.

Boundary: this confers no sensory credential. Where alcohol is tasted in training, applicable law and venue policy govern, and TABC is the controlling authority.


What These Three Schools Establish

Eighteen classes, and they build the instrument the other seven schools depend on.

Three design points that hold for the remaining schools.

The practice is the content. A module can teach a mechanism; a school has to build a capability, and capabilities are built by repetition against a reference. Which is why these classes are mostly instructions to do things rather than things to read.

Every class has a reference, and several of them are objective. A graduated cylinder. A fresh bottle. A sound sample alongside a faulted one. Your own build from three hours earlier. Per Module 15, a practice with no reference builds a confident wrong habit — which is worse than no practice.

And the most valuable classes are the uncomfortable ones. Taste your own open and close builds blind. Run a duplicate on yourself and find out whether you are calibrated. Count your own steps. Compare your Tuesday build to your Saturday build.

Those four produce self-knowledge that nobody else can give a bartender, and they are the reason a school is different from a module.
