The capability: your syrups are the same every time regardless of who makes them.
Prerequisites: Modules 11, 42.
The practice
Have two people each scoop a cup of sugar the way they normally would. Weigh both. Ninety seconds, and the spread is the argument.
Then make one syrup by weight and one by volume. Build the house sour on each. Taste them together.
Then convert every syrup spec to weight.
And check the gun separately — taste the mixer straight from it, because a drifted post-mix ratio affects every gun drink and no bottle build, per Module 11.
The reference
The scale, which is objective and settles it.
What you are building
The recognition that a volume-specified syrup is not specified at all — sugar packs differently and the ratio is whatever the scoop happened to produce.
Which makes it the silent variable behind a great deal of drift in a room where the margarita is the volume cocktail.
Verification and boundary
The weighed spread, and every spec converted.
Boundary: labeling, dating, and shelf life are governed by the local health authority.
