Class 1 — Measuring the Station

Part of the Tools and Station school. Class 1 of 6.


The capability: you can count what your station costs you, in steps and reaches, and name the three changes that would help most.

Prerequisites: Modules 3, 48.

The practice

Count steps for ten rounds. Not seconds — counts, per Module 48. Speed is eliminated motion rather than faster motion, and a count is the measurement that matches the mechanism.

Count reaches outside the working arc for the same ten rounds.

Then map the station. Every item, and how often it is used.

Then move three things and re-count.

Repeat the count monthly, because a station drifts as products and volumes change.

The reference

Your own previous count. This school's reference is the before-and-after rather than an external standard, because a station is specific to a building.

And a second bartender's count on the same stationbecause a difference between two people on the same station is a layout finding rather than a skill one, per Module 3.

What you are building

The habit of seeing motion rather than speed.

Most bartenders have adapted to their station so thoroughly they have stopped noticing what it costs them. The count is what makes it visible again, and it is the only thing that does.

Verification and boundary

The two counts, before and after. A number that moved is the verification.

Boundary: bar construction, plumbing, and drainage are governed by applicable building requirements.
