The capability: you set up to the night rather than to a standard.
Prerequisites: Modules 42 on the kitchen side, 50, 57.
The practice
Get the night type and the advance count before setting up.
Position by expected volume — the three highest-volume spirits, the glassware, and the ice, all inside the arc.
Stage to the spike, not to the average.
Then measure: how many times did you leave the well during the first break?
And repeat across four different night types until the setup varies with the night without a conscious decision.
The reference
The number of times you left the well. That is the setup's grade and it is the most honest one available, per Module 50 — a bartender leaving the station during a surge is the most visible symptom of poor staging.
What you are building
The connection between information and preparation.
A station set up for a Tuesday cannot be fast on a Saturday regardless of who is working, and most bars set up identically every night because nobody gave them a number.
