Mechanism
Fermentation creates ethanol plus volatile congeners. Distillation separates and concentrates compounds according to volatility and process design; it does not simply “purify alcohol.” Pot stills work batchwise, while columns provide repeated vapor-liquid contact. Heads, hearts and tails are operational cut concepts, not perfectly pure chemical fractions.
Sensory standard
Taste categories comparatively: raw-material character, fermentation aroma, oak, texture, proof heat and finish. Comparative tasting is more useful than memorizing brand adjectives.
