Mechanism
Flavor perception combines taste, orthonasal and retronasal aroma, texture, temperature and trigeminal effects such as ethanol burn and carbonation bite. Sensory training improves when tasters describe before judging and compare controlled samples rather than memory.
Sensory standard
Record intensity, sweetness, acidity, bitterness, alcohol heat, aroma families, body, carbonation and finish before calling something “good” or “bad.”
