Shaking vs Stirring
Choose agitation for texture, aeration, chilling and integration.

Mechanism
Shaking produces turbulent mixing, rapid heat transfer, aeration and fine ice fragments. Stirring mixes with less air and generally creates a clearer, silkier texture. Both can chill and dilute effectively; desired texture and ingredients decide the technique.
Sensory standard
Shaken citrus drinks should be lively and integrated; stirred spirit-forward drinks should be cold, polished and clear unless the style says otherwise.
