- Total formula input
- 6 kg before trim, evaporation, absorption or transfer loss
- Time
- 35 min active · 60 min total

Scaling table
Use the input-percentage column to audit transcription. The ½× and 2× columns scale ingredient mass only; process capacity must be revalidated.
| Ingredient | % of input mass | ½× | 1× | 2× |
|---|---|---|---|---|
| Onion rings | 53.33% | 1.6 kg | 3.2 kg | 6.4 kg |
| All-purpose flour | 20.00% | 600 g | 1.2 kg | 2.4 kg |
| Beer | 18.33% | 550 g | 1.1 kg | 2.2 kg |
| Cornstarch | 4.17% | 125 g | 250 g | 500 g |
| Kosher salt | 1.50% | 45 g | 90 g | 180 g |
| Baking powder | 1.00% | 30 g | 60 g | 120 g |
| Paprika/pepper | 0.83% | 25 g | 50 g | 100 g |
| Dry flour for dusting | 0.83% | 25 g | 50 g | 100 g |
Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.
Method
Separate onion rings and dry surfaces; dust lightly with flour so batter adheres rather than sliding from wet onion.
Whisk dry batter ingredients, then add cold beer only until smooth enough to coat; avoid long holding that consumes carbonation/leavening effect.
Dip rings, allow excess batter to fall away and lower individually into recovered oil to prevent clumping.
Fry until crisp and golden while onion is tender but not collapsed; turn only as needed for even color.
Drain on racks, season immediately and serve without covering.
Working numbers
- Finished formula basis: 6 kg
- Cold fresh batter supports lighter crust
- Individual loading prevents fused clusters
- Quality hold is measured in minutes, not a steam-table period
Production verification
- Record actual finished batch weight before portioning; compare with target and investigate material variance.
- Record actual portion count and portion mass during service rather than inferring count from target yield.
- Verify current supplier labels for major allergens and document cross-contact limits of the actual station/equipment.
- Record the process/temperature checkpoints that are critical to this formula under the venue’s approved food-safety procedure.
- Taste or otherwise evaluate the formula at its actual service temperature and after the realistic hold/travel interval.
Batch record: target yield ____ · actual yield ____ · actual portions ____ · critical process checkpoints ____ · service hold ____ · waste/rework ____ · sensory result ____ · corrective action ____.
Sensory standard
Light crisp craggy shell, sweet tender onion, no raw batter seam, no thick greasy jacket.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
Failure laboratory
| Failure | Likely mechanism | Correction |
|---|---|---|
| Batter slides off | Onion wet/not dusted | Dry rings and apply a thin flour pre-dust. |
| Heavy doughy crust | Batter too thick or old | Correct viscosity and mix smaller fresh batches. |
Version control
KECB professional training formula; validate local regulatory requirements, supplier specifications and venue procedures before production. A measured correction to the recipe becomes a documented formula revision after a controlled test; do not let different cooks maintain invisible personal versions.
