Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Cut okra uniformly shortly before breading; prolonged cut holding increases mucilage on surfaces.

  2. Toss lightly with buttermilk, drain excess and coat in cornmeal-flour seasoning without compressing into paste.

  3. Shake away loose meal before frying so fryer sediment does not burn excessively.

  4. Fry in batches that preserve recovery until exterior is crisp and interior loses raw grassy character while remaining tender.

  5. Drain, season and serve immediately; do not cover the batch.

Sensory standard

Dry crisp cornmeal crust, tender green okra, slight fresh vegetal character, no slimy wet coating or burned meal bitterness.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
