Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Dissolve sugar and salt in a measured portion of warm water, then cool that solution before combining with vinegar.

  2. Whisk in vinegar, peppers, hot sauce and garlic; do not boil away the volatile vinegar character.

  3. Rest refrigerated so pepper extraction begins, then agitate and taste again before service.

  4. Measure final weight and correct only with the documented vinegar/water ratio if evaporation or transfer loss occurred.

  5. Label as refrigerated sauce and keep the service bottle small enough to turn over quickly.

Sharp clean vinegar aroma, pepper heat, enough sugar to round the edges without reading as sweet barbecue sauce.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
