Method
Combine flour and salt; incorporate egg/yolk gradually until a shaggy dough forms.
Knead only until the dough is smooth and elastic; hydration varies slightly with flour and egg size, so reserve corrections for measured need.
Wrap and rest to allow flour hydration and gluten relaxation.
Divide into equal pieces, laminate through rollers progressively and cut to the required shape/thickness.
Dust minimally, portion by weight and cook in abundant water close to service.

Sensory standard
Smooth elastic dough, clean egg aroma, thin sheets without tearing, cooked pasta tender with resilient bite rather than raw flour core.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
