Method
Cut carrots uniformly so tenderness develops at the same rate.
Combine carrots with measured liquid, butter, sweetener and salt in a wide pan; cover initially if needed to establish steaming.
Cook until nearly tender, then uncover and reduce the remaining liquid while tossing so butter/sugar form a thin glaze.
Stop reduction before sugars scorch or butter separates; carrots should be coated, not sitting in syrup.
Weigh to 5 kg, finish herbs and serve with defined tender-but-structured texture.

Bright carrot flavor, tender with structure, glossy thin coating, balanced sweetness and salt; no watery puddle or sticky candy shell.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
